Amairo's unique umami-rich sweetness is thanks to the novel brewing technique deployed by its brewers: the rujio method.
This technique replaces some of the traditional "shikomi-sui" brewing water with finished Amairo, feeding the brewing process and achieving a deep, dense and decadent product perfect for dessert.
In 2020, the revered Narisawa, a Michelin-starred Tokyo restaurant headed by Chef Yoshihiro Narisawa hosted a pairing event featuring exclusively SAKE HUNDRED sake. The dishes included this mouth-watering combination of Gengai and slow-roasted Kobe beef.
