Discover the artistry of sake with Ikekumo Junmai Daiginjo -- a delicate blend of floral aromas and silky smooth texture that will leave you wanting more.

Junmai Daiginjo (純米大吟醸) is a premium grade of Japanese sake, a traditional Japanese alcoholic beverage made from fermented rice.

Junmai Daiginjo is made with only rice, water, yeast, and koji (a type of fungus that converts rice starch into sugar). To be classified as Junmai Daiginjo, the rice used in the brewing process must be polished to at least 50% removal of its outer layer, resulting in a more refined and delicate flavor profile.

Junmai Daiginjo sake has a light, fruity aroma with a delicate and complex flavor profile that can include notes of apple, pear, and melon, as well as floral and herbal notes. It is known for its smooth, silky texture and is often served chilled to highlight its delicate flavors.

DO YOU KNOW?

All Champagne is labeled with a word to indicate sweetness level. Brut Nature, Extra Brut, Brut, Extra-Dry, Dry, and Demi Sec.

The sweetness in Champagne is unlike sweetness in wine. It comes in the form of a sweetened “dosage” (a mixture of wine and sugar or grape must) that’s added at the end of the second fermentation (the part that makes the bubbles).

The dosage is essential because acidity is so high, it would be undrinkable (or like drinking straight lemon juice).

So that you know, most Champagne is produced at a Brut level of sweetness.
