Today, we will be sharing a little more on Seasonality in Japanese Sake!

Seasonal Sake refers to Sakes that are only available for a limited time of the year. Sake is usually only brewed in the cold months in Japan, bottled throughout the year and released during different seasons.

For example, Sakes such as Hiyaoroshi, are pasteurised just once after brewing, and left to mature in tanks through the hot months, before being released during Fall. These Sakes tend to have a lively yet complex, deep flavour.

🍶Ariiso Akebono Junmai Ginjo

There is a beautiful story behind Takazawa Shuzo that produces the Ariiso Akebono Junmai Ginjo. The founder, Riemon, was captivated by the gorgeous scenery of the Tateyama mountain range and decided to start brewing Sake in Himi, Toyama. The name Ariso Akebono comes from the poetic image of sunrise at the Ariso Sea.

Unsurprisingly, this Junmai Ginjo is refreshing and embodies a light and mild flavour that is accompanied by its complex aroma, beautiful as its origins.
