Mortlach慕赫酒廠是來自蘇格蘭「達夫鎮（Dufftown）」的一家神秘而傳奇的酒廠，該地被譽為世界威士忌的首都。它是該區域的第一家合法酒廠，以其獨特的肉質風味和醇厚口感聞名。知名威士忌專家Dave Broom將其譽為「達夫鎮的野獸」。Mortlach慕赫酒廠被稱為威士忌界上一個百年的謎團，其最大秘密在於其創新的「2.81次蒸餾工藝」。這種工藝結合了科學的邏輯思維，源於酒廠創辦人的兒子亞歷山大‧考威博士於1896年發明的蒸餾過程，創造出與Speyside區一般輕盈花果風格迥異的多層次、肉質般鮮甜的醇厚風味。該酒廠使用六個不同尺寸和形狀的蒸餾器，分為三個初餾器和三個終餾器，透過它們的交替蒸餾，以3號初餾器和終餾器提煉出細緻的麥芽口感，而1號和2號初餾器以及2號終餾器的反覆蒸餾則產生清雅的果香風味。最後，通過最小體積的著名「Wee Witchie小女巫」終餾器，最終釀造出肉質般鮮甜、馥郁醇厚且層次豐富的酒液。Mortlach酒廠的製酒工藝與蘇格蘭和愛爾蘭威士忌的傳統製作方法大不相同，既非兩次蒸餾，也非三次蒸餾，而是剛好2.81次，因此得名。

It was the first legal distillery in the region and is famous for its unique meaty flavor and rich, full-bodied character. The distillery's innovative "2.81 distillation process," invented by Dr. Alexander Cowie in 1896, creates a distinct, multi-layered, and sweetly rich flavor that sets it apart from other whiskies in the Speyside region. Mortlach Distillery uses six different-sized and shaped stills to achieve this flavor profile.
