今次我地為大家搜集左三間新廠。其中一間就係太平釀造 ( )，佢地嘅酒廠標緻用左傳統神話故事原素做主題 🐅。酒廠係位於山區而今次佢地準備左一款 Wild sour 比香港嘅飲家 - Winter sour。依款酒係用左野生酵母混合發酵，之後再加左韓國 🇰🇷嘅醬油去同啤酒熟成。

Winter sour 係嘅低酒精 (4.3%), 又帶左豐富嘅水果 🍊🥭香氣，口感順滑，微微嘅酸度令飲家們好開胃，好適合夾野食架！今次嘅 on draft 喺 同 可以飲到🤤，大家唔好錯過💨💨。

雖然係大熱天時，各位飲家喺屋企涼冷氣飲啤酒果陣可能都想要啲陳桶🛢️啤酒。今次我地為大家提供兩款來自 同 嘅陳桶啤酒。

Barrel-Aged Apple Chutney 係 Gorilla 將蘋果 🍎，柚子 ，百里香🌿同莞荽籽喺威士忌木桶陳釀兩年嘅酸啤酒。陳年除左吸收左桶味，同時令水果味都更加強勁。

另一款就係 Fundamental 嘅 Revolver，佢地釀造嘅諗法係來自 revolver cocktail 🍸 。佢地加入橙 🍊同咖啡☕️之後，再喺波本桶陳年。依款啤酒版嘅 revolver 大家一定要試下！

好熱呀，天氣先生都熔啦🔥🔥。再熱嘅天氣我地都會為大家提出高質素嘅啤酒🍻，今次我地嘅韓國啤酒除左 Gorilla brewing，仲有好幾個新品牌添，嚟緊幾日我地會為大家逐一介紹👀。

今次 🦍嘅 IPA 風格非常之闊，除左基本款 Gorilla IPA (Mosaic/Sabro), sour IPA 同 Popsicle IPA (Milkshake with orange and vanilla) 之外，今次嘅 Dive 系列有3 個新款😎，

Baby Dive 係一款 session west coast IPA, 清爽，松木🌲，再加上輕盈水果味道就岩曬熱天大口飲。另外 Love Dive 係最新出嘅 NEIPA，用左4 款酒花去展示柔和嘅橘果🍊同埋熱帶水果🥭🍍香氣。

鐘意重味道嘅飲家就唔可以錯過 Hop Bomb #18 DIPA同埋 Triple Dive TIPA 啦，兩款酒聞香同飲起嚟都係超級果感，雖然 Triple Dive 酒精度達13 %，但係佢嘅酒體平衡做得非常之好😎。

最後 Gorilla 今次有一款覆盆子 imperial gose，依款酒嘅水果強度係 250 gram / liter，而重點係佢完全冇藥水味同酒精感添，唔覺唔覺就會飲左好多。🍺🍺🍺

由我地公司進口嘅草家 makgeolli 已經喺 可以飲到啦🍶。草家嘅 makgeolli 含豐富米味，柔和而甜度平衡嘅米酒。佢地已經出口日本達三十年，加上草家對 Nuruk (發酵前驅物) 嘅深入了解令到製作嘅 makgeolli 十分美味。

Mora 係一間法國/中國創新菜嘅二星米芝連餐廳。佢地嘅食物以大豆為基本食材，再憑創意同味道搭配去變奏出唔同嘅佳餚。除左食物，餐廳入面嘅設計都十分之有心思，包括洞石吧檯，實木天鵝絨座椅同懷舊壁燈。佢地嘅美食同 makgeolli 所帶出嘅米香十分之匹配。我地未來將會引進更多韓國 🇰🇷唔同類型嘅米酒去帶比大家更多驚喜✨。

We are delighted to announce the availability of Choga makgeolli 🍶 in - A two star Michelin restaurant. The makgeolli from Choga presents pleasant rice flavour profile, with nice balance of sweetness and softness. Their makgeolli has been exported to Japan for more than 30 years. Choga has deep understanding of Nuruk (The fermentation starter of makgeolli), therefore producing high quality makgeolli.

Mora is a French x Chinese cuisine restaurant, using soy as the fundamental ingredient in their novel cuisines. They create ground-breaking cuisines with their innovation and knowledge on food flavours. Apart from food, the restaurant is decorated with premium wooden furniture and vintage lamps, creating a classy vibe. Their food pairs well with the rice flavour of makgeolli. 日本清酒 (Sake) 大家都聽得多, 飲得多, 原來韓國都一樣有濁酒 (Takju) 同埋清酒 (Cheongju) ?🤔🤔

韓國嘅米酒由洗米 🍚 -蒸米 ♨️-再利用 Nuruk 發酵, 成為濁酒 (Takju)。而 Nuruk 🧪 係一個十分有趣嘅發酵媒介，因為佢含有多種微生物：野生酵母，益生菌同埋酵素。以上嘅物種喺發酵完成後令酒體增加輕微酸度同埋豐富嘅味道。

得到濁酒後，釀酒師可以直接將濁酒包裝，成為著名嘅馬格利 (Makgeolli) 。另外，濁酒可以沉澱分層，並提取上層嘅清晰液體成為清酒 (Cheongju)。值得留意嘅係坊間嘅廉價馬格利係酒廠將沉澱物稀釋，再加糖增加甜度，所以佢地嘅味道同酒體平衡感係同優質未稀釋嘅馬格利 (Premium makgeolli)相差十分大。

近年各間酒廠著力去研究同學習韓國米酒唔同嘅發酵條件同特性，令到製造出嚟嘅優質馬格利同清酒，無論喺口感，香氣同埋平衡都十分好。一枝十幾度酒精嘅清酒都可以口感順滑，甜度剛好而且冇乜酒精感🤤🤤。

大家喺品嚐韓國嘅米酒嘅同時都可以學識欣賞佢地唔同嘅分類同釀酒技術。另外，我地好快又會再次舉辦試酒活動，大家要留意住我地嘅 IG 啦！⏰

韓國馬格利 (makgeolli)係一種經典嘅酒, 佢曾經一度被認為只係低下階層同埋年紀大先會飲嘅酒。隨著佢地嘅包裝同埋味道嘅變化, 現今嘅makgeolli 已經喺韓國再流行, 重有好多年輕人有興趣去探索佢地嘅味道, 收藏唔同嘅 makgeolli 包裝, 甚至加入去做釀酒師。

我地將會喺 19/5 (星期五), 7:30-9:00 pm 舉辦一個 makgeolli 品酒工作坊。除左試飲總共6 款唔同嘅 makgeolli, 我地重會有一啲關於 makgeolli 嘅知識同埋酒款對比體驗, 令大家對市面上同埋唔同類型嘅 makgeolli 有更加多嘅體驗。今次我地會有六款新鮮空運到港嘅 makgeolli, 分別係:

1. By Chance Mint, 6.5 %, sparkling makgeolli
2. By Chance Purple, 6.5 %, sparkling makgeolli with grape

我地除左有高質素韓國精釀啤酒之外, 我地一樣重視韓國嘅馬格利 (Makgeolli). 大家喺坊間買到嘅韓國馬格利可能質素未必理想. 因為儲存, 運送方法同埋酒廠有否進行殺菌都影響住大家飲緊嘅味道同香氣. 我地最新四月中由韓國新鮮空運到港嘅馬格利已經全部上架, 有興趣嘅客人可以直接 DM 我地詢問價錢同埋運費. 今次我地嘅款式有 嘅 By Chance 系列, 同埋 嘅馬格利.

By chance 嘅款式由原味, 提子味到粟米味都一應俱全 (935 mL / 6.0 %), 而依三款都係屬於氣泡式馬格利 (Sparkling makgeolli), 所以開嘅時候要份外小心, 要等佢慢慢放壓再享用. 放壓嘅過程, 酒同沉澱物會慢慢混和, 然後一打開就可以同朋友分享, 而且輕鬆易飲, 好快飲完一枝. 如果鐘意加入水果款式嘅你就唔好絢過提子味同粟米味啦!

除左 By Chance, Seoul Art brewery 今次都有兩款馬格利, 分別係原味 (Seoul) b同加入仙人掌花/杜鵑花款式 (Seoul Pink), Seoul (500 mL / 7.5 %) 散發出陣陣米香味但係飲起嚟絕對冇負擔. Seoul pink除左有精美嘅包裝, 而酒身都因為加入左乾花而變成紅色.

最後一款 Baegeumdoga makgeolli (500 mL / 12 %), 好多人都好奇乜原來馬格利都可以12 % 架咩? 冇錯, 依款酒用左佢地嘅特別自家酵母發酵, 酒身散發出清香米同旨味, 依款酒除左單獨飲之外, 都十分之適合配合食物.

今個星期六 (15/4) 大家記得留時間嚟 .thebrew 飲返杯 釀嘅兩日鮮嘅 IPA/DIPA 啦。做得啤酒發佈就一定好多獎品同啤酒比大家飲，仲有美味嘅食物搭配啤酒一齊享用。

今次我地都有酒廠嘅周邊產品比大家以消費方式換領, 稍後我地喺 facebook event page (Link in Bio) 會進行更新. 同時兩間酒廠嘅老闆都十分慷慨, 佢地將自己廠特別嘅限量啤酒帶嚟香港, 所以我地都會有一個獨家啤酒品飲環節. 除左飲啤酒之外, 當然唔少得有美食配搭. 當日都有 嘅大大粒又好味嘅麻辣雞餃子同擔擔麵做我地新鮮啤酒嘅食物配搭, IPA 嘅苦度係可以令食物嘅辣度提升. 同時 IPA 嘅爽口感覺都可以幫手減輕油膩感. 到時大家嚟到真係可以又飲又食.

Save the date guys! This coming Saturday (15/4) will be the superfresh beer launch event at Out Of The Brew. You will be able to drink 2 days old IPA and DIPA from Gorilla and Chillhops. In addition to prizes and beers, there is also food pairing menu for the nice beers.

The prizes of the event are to be rewarded by purchase amounts, we will soon update the information in the facebook event page (Link in Bio). At the same time, the owners of the breweries are generous to bring their own limited beers for tasting. Therefore, we are happy to have an exclusive tasting session during the day. Moreover, the food pairing menu is prepared by dumplings, in which spicy chicken dumplings and Dandan noodles are available for your stomach. The spicy feeling is amplified by the bitterness of IPAs while the carbonation can cut through the oily feeling of food.

今次將會介紹一間充滿韓國風格嘅酒廠，佢就係位於仁川嘅 ，縱使佢地嘅酒標看似平凡，但係佢地嘅酒係十分之好味。佢地喺2016 年嘅時候只係一間特許經營精釀啤酒餐廳，佢地到2017 年就喺仁川以委託三間酒廠型式去釀造佢地嘅啤酒。後來佢地為左更好地去保持質素同貨量，佢地喺 2018 年正式成立 Incheon brewery。依間酒廠係一步一步咁堅持直到開到佢地自己嘅廠💪🏻。

今次到貨有佢地嘅招牌Sabzak IPA，低酒精同苦度但係帶出十分豐富嘅水果味。重點係依款 IPA 推出後好快就賣曬 💨💨。下一次希望除左有依款 IPA, 更加希望會有佢地嘅 Sleepwalker DIPA ! 見到嘅時候記得快手買返枝嚟飲啦🍻🍻🍻。

Incheon Brewing was founded in 2016  under the name of "The Cabinet of Dr. Caligari" Tap house which has 20 franchisees nation-wide at Songdo. The beers of Incheon Brewing have been contract brewed in 3 different breweries until 2017 and has moved to old factory venue where current brewer is located in China Town of Incheon on Jan. 2018.

We are delighted to have their signature Sabzak IPA in this shipment, but they are gone in short time 💨💨, it is a low abv and bitterness yet fruity IPA. Their Sleepwalker DIPA is also a good-selling beer in Korea with a good rating in Untappd. You cannot miss their beers in the next shipment. 🍻🍻🍻

相信大家都知道我地較早前帶左好多韓國🇰🇷嘅精釀啤酒🍺嚟到香港🇭🇰，但係韓國點止有好嘅精釀啤酒呢！韓國嘅傳統米酒 🍚一樣可以製作出好豐富嘅味道。由於唔同地區嘅米加上唔同部分嘅發酵成品，釀酒師可以選擇過濾或者唔過濾而製造出唔同嘅米酒風格 - Makgeolli (馬格利), Cheongju (清酒) 同埋 Yakju (藥酒) 。

同啤酒嘅酵母有少少唔同，韓國米酒係用 Nuruk - 一種含乳酸菌/真菌/酵母🧫嘅發酵前驅物去進行大約7-10 日嘅發酵。上層經濾後嘅會係 Cheongju /Yakju, 而下層嘅沈積物就會用嚟製作 Makgeolli。為晝保留更多風味，釀酒師再可以選擇去進行滅菌 (pasteurised) 或者保持原來嘅味道 (non-pasteurised) 嘅風格。

當然，原味冇經滅菌嘅米酒就需要低溫保存並且盡快飲用，飲家可以品嚐新鮮同好多味道。滅菌嘅米酒就可以增加保存時間 ⏳。

🍺 Gorilla IPA (American IPA), 5.5 %

𠵱款係 Gorilla 嘅著名基本款，用左四種唔同嘅麥芽再加入大量 Mosaic 酒花去釀製嘅酒款。口感清爽而且帶出麥芽甜，橘果 🍊同平易近人嘅苦味，再混入 Sabro 酒花加多層椰子 🥥 味道。𠵱款酒既低酒精又好味，好容易就會飲完一大杯🍺🍺。

Gorilla IPA is the core range, consisting of 4 types of malt and a generous amount of Mosaic hop. The beer presents sweetness of malts, citrus 🍊 and pleasant bitterness. The dry hopping of Sabro hops creates another layer of coconut 🥥 flavour. This beer is crushable with low alcohol content, you will easily finish a pint. 🍺

🍺 Sunshower IPA (Sour IPA), 6.2 %

Sour IPA 講求適合嘅酸度同啤酒花互相提升。Gorilla 依款 Sunshower 故名思義，係令大家彷佛置身於陽光下嘅一款充滿檸檬 🍋，橘果 🍊 感嘅酒。𠵱款酒嘅解渴💦💦又十分適合最近嘅溫暖天氣。

A good sour IPA can showcase the excellent blend of sour and hops. The Sunshower provides you lemony 🍋 and citrus 🍊 flavour with pleasant sourness. It is also a thirst-quenching 💦💦 beer for the warm weather.
