It’s that time of the year when you want something hot and boozy, perfect time for a mulled cider!

Take one traditional style dry cider such as our Somerset Redstreak cider and in a pot add the ingredients show above. From top left star anise, brown sugar, cinnamon, elderflower, cardamom, orange peel, juniper berries, bay, rosemary and pop then all into a small style mesh bag, tea infuser or hop spider. Simmer to 65c and pour into your favourite sipping mug.

Wow. It is finally time to post what has been five years in the making. We have a Calvados! Not that we can officially call it that but it is what it is.

After what started as an off hand conversation over five years ago with Tim, we have a limited release of just under 200 bottles of this wonderful tasting apple brandy. Beautifully smooth and with gorgeous cider notes this brandy has been distilled from our full cider apple cider and then oaked for a long time. The result is magnificent!

I cannot thank Tim, Paul, Leo and many others from .distillery enough for their massive work in helping this come to pass. I’m eternally grateful.

When the apple karma fairies throw you a googlie in a most unexpected way.

Three buckets of keeve fruit milled, and then your scratter motor goes “clunk”. Dead as a dodo.

It is of course Easter Thursday after 5pm. Call around anyone I know locally who may potentially have a scratter I can borrow, but like me it’s apple season and everyone is busy!

Luckily I know these awesome guys at in Melbourne who were able to source me a new Voran 3 phase industrial quality mill. Should last me a lifetime now.

And then when I get back, the 3 phase plug doesn’t fit into my outlet. Special thanks out to Dean our sparky friend extraordinaire just down the road who got me out of trouble. Thanks !!

After the egg hunt it will be mill like crazy to get this done before we go on our cruise on Tuesday. Keeve juice can sit at 2c until I get back to add the enzyme.

Fingers crossed. What else could go wrong?

Well it’s the beginning of that time of the year again. This trailer load is a special load of fruit destined for the third attempt of the black art of keeving. After many attempts and talking to experts from France, it’s mainly about fruit selection.

This trailer load (insider the garage so the possums won’t get it) is mainly sweets and bitter sweets with a small selection of bitter sharps and some acidic apples. Keeves don’t like too much acid apparently so fingers crossed!

On the plus side, my whole garage now smells of delicious cider fruit!

Ready to grow your own apples? It’s that time year again when I’m pruning and you can grab a scion for the whopping price of $2 per variety. We have the following: Kingston Black, dabinett, peasgood nonsuch, brown snout, bulmers Norman, Michelin, stokes red, worchester Permian, Bramley, Freyberg, Clozette, improved foxwhelp, Somerset redstreak, beauty of bath, and reidsdale red.
Looks like an early spring so you’ll need to graft on within a few weeks I would suggest

There is still time to get your tickets for the awesome day that is Batlow Ciderfest! Unlike last year with freezing sleet, it is meant to be a lovely 16c so no reason not to come along!

We will have our Son of Cranky (almost the same as the best in class Cranky Pomme from a few years ago), Yarlington Mill, Naughty Nanna, Ginger Apple, mulled cider and sparkling apple juice.

Can’t wait!

Big ask, but does anyone have a dual axel trailer capable of carrying one tonne of weight that I’d be able to borrow overnight next week? Given fuel costs I’d rather not have to take two trips up to Orange next week to collect processed juice.

Project Python- a metheglin (spice/herbed) mead at 9% ABV. Made with wonderful honey from The Honeysmith] and our own elderflower, rosemary, bay, juniper and a few other bits and pieces, including some cider fruit.

There will be a few select bottles of the test batch going to cider friends before the next large batch starts in about a month.

Whilst I do love cider, it’s great to be able to make a variant of the worlds oldest recorded alcoholic drink!

Have to announce the first attempt at the keeve while successful was also a fail. Added waaay to much of the calcium salt so it ended up unpalatable on the salty side of things. Lesson learned. Hopefully next years attempt will be more successful.

It’s about to be pruning time. Next week I’ll be pruning all the fruit trees so will have scions available for sale at $2 each. We have the following trees that will be ready for the chop:

Improved Foxwhelp, Kingston Black, Somerset red streak, bulmers Norman, pink lady, Granny Smith, Freyberg, Cox’s Orange Pippin, dabinett, Bramleys seedling, red Stoke and brown snout.

I also have three dabinett established trees for sale $30 each. They’re about 1.2m tall in 40 pots

Hello 3Sons Collective. I am the borg. Resistance is futile.

I have about 400kg of Kingston Black cider apples if anyone would like to grab some. $1 per kg. Really cheap. Google them for more detail.

They are all being crushed starting today and I hope to have the bin done by Monday at the latest.

They will not have as high a yield as culinary fruit so best crushed and then left overnight to macerate. I can give you a little extraction enzyme but it’s a very strong beast. No more than an hour after addition should you press it otherwise enjoy the apple soup.

I thought this was pretty neat - an apple or pear fruit filler that moves up as it fills the bin. Got to see this in action as I met up with in Armidale after also catching up briefly with as well as family. Long way to come but all worth it after not having seen them for a year.

Benefit of also taking home a ute full of red d’anjo, howells and burre Bosc pears.

Funny how the addition of a new chain to kick the legs out slightly, and a few coats of natural decking oil ha e made this bad boy look so much better. It’s now also inside the house out of the cidery taking up valuable floor space. How people would have this as you walked through the front door!

And in case you don’t know, it’s called a riddling rack, used in one of the stages of production for méthode traditionnelle products.

Odd question, but anyone who has attended one of workshops in the past few years, I would have given you a handout of a list of North American eating apples and suggested combo's. If anyone still has a copy or took a photo could they send it my way please - I seem to have deleted it by accident and cannot for the life of me find it again.

Hi everyone. Please note that all booking spaces for the upcoming workshops have been filled! Given the higher than normal interest, we will be looking at running another weekends worth in spring, probably during September holidays.
