She will be pouring two Hananoi sakes:
Junmai Duck-N-Sakura
This sake is made with "divine rice" cultivated naturally for ages, where ducks grace freely and uses "divine water" from Goshogomagataki Shrine in Sakuragawa City, Ibaraki Prefecture, protecting a thousand-year-old forest. It's a unique creation, avoiding sake rice, and highlighting the Toji's skills.
Ortho-nasal: Sweet aroma reminiscent of Sherry wine, followed by flavors of muscat, rum raisin, vanilla, red bean paste.
Palate: A delightful sweetness and aging notes. This sake uses whole ancient grains, providing the umami richness of glutamic acid and a clean sweetness similar to syrup.
Retro-nasal: Pleasant hints of plum sake, lily flowers, mandarin orange, and a subtle touch of lime lingering gracefully.
Tokubetsu Junmai “Cat Thief“
This sake is created using edible Koshihikari not sake rice, and is aged for over two years, resulting in a harmonious and crisp profile with a dry taste, umami, acidity, and a subtle bitterness.
On the nose, Orthonezal offers aromas of roasted chestnut skin, freshly pounded rice cakes, green apples, and a hint of nutmeg. When you take a sip, you'll experience restrained sweetness, a clean, sharp, and refreshing acidity, along with the umami from the edible rice, all while a gentle bitterness lingers in the aftertaste, leaving a refreshing aroma and richness.
