Drinks from fermented cane sugar juice have been produced since ancient times and probably originated in India or China. as we know it today was first in the 17th century on the sugarcane plantations of the and, tradition has it, on the island of .
Sugarcane for rum production is harvested by hand and then crushed to release the juice. There are three different ways in which it can then be processed, producing three different bases. This is then either fermented naturally, where the sugars are left in open vats to rely on the natural yeast present in the environment, or controlled, with specific yeast cultures added. Most distilleries use a combination of the two techniques. Rum can be distilled using either a pot still or a continuous still. As with whisky stills, each is unique and handmade. The raw spirit is generally collected from the still at between 70% and 90% alc/vol. Unlike and , which emerge as a clear spirit, freshly-distilled rum can vary in hue from clear to black.
Rums may be infused with herbs and spices, and even with fruit. They can be aged in oak barrels, or in some cases bottled immediately. Rum doesn’t need to age for as long as a spirit such as whisky, and it reaches maturity a lot faster. It will also go over the top faster if left too long. This more rapid rate of aging is partly down to the Carribean climate. As with whisky, most rum is blended before bottling with other batches of differing ages, and is diluted with water for a consistency that normally sits between 40% and 50% alc/vol.

History will always shape what you become, and Flor de Cana is no different. The fifth generation, family-owned distillery has seen its share of adversity, narrowly surviving a plane crash, a civil war, nationalizations, hyperinflation, fires, hurricanes, earthquakes and volcanic eruptions. It was the decade-long turn down during the civil war in the 1980s that meant would come out the other side with the largest reserve of aged in the world.
Nicaragua comes first for the Pellas family, and their dedication to has seen the distillery recently achieve carbon neutral certification, while the rum is distilled with 100% renewable energy and over 50,000 trees are planted annually. If there existed a Mount Rushmore of , then without question would be etched proudly upon it. Founded in 1844 on a plateau above the river by barley farmer and school teacher Alexander Reid, The Macallan was one of the first legally licensed to operate in . In the nearly two hundred years since then, they have established a reputation for luxury, rarity and above all, quality. From William Tell-like scenes in Bond films featuring a glass of fifty-year-old to world record-setting prices at auction (a whopping £848,000 for a bottle from 1926), the legend of The Macallan has only seemed to be accelerating in recent years.
Distillation of The Macallan is done through a number of relatively small stills, the idea being to maximise contact of the spirit with copper to produce a rich and full bodied flavour. From the stills, these characters are further enhanced by one of the most selective cuts of new make in the industry. The next step for almost all of this spirit is barrelling in ex-sherry casks. For The Macallan this is perhaps the most important step of all, and their barrels are made to exact specification and selection from American and European oak. The final result is a fruit forward, full, spicy and incredibly rich expression that more than demonstrates exactly why The Macallan whiskies have won such acclaim.

Remote, windswept and rugged, the Orkney islands rise where the ferocious waters of the Atlantic and the North Sea meet. As they say at , Orkney stands proudly apart. The story of both the and its Orkney home cannot be told without reference to hundreds of years of rule, and indeed it is much of this history that provides both Highland Park’s inspiration and its lifeblood.
As part of a sprawling Norwegian kingdom, Orkney was the seat of Viking Earls from the ninth century right up until it was absorbed into Scotland as part of a dowry in 1472. The Earls, as one might expect of Vikings, boasted many warriors, but also some capable administrators and even the martyred saint Magnus, whose name was given to the cathedral in the islands’ largest town, Kirkwall.
Highland Park’s own founder was another Viking Magnus, a butcher and church officer by day, and distiller and smuggler by night. The location of his illicit still overlooking Kirkwall remains the site of Highland Park today. Traditions established by Magnus remain the touchstones for Highland Park. They are one of the few distilleries to still use hand-turned floor maltings – a painstaking process.
Peat is an important part of the whisky, but the style here is quite unique. As on , few trees can survive Orkney’s winds, but the character of the itself is markedly different. Unlike the medicinal and maritime flavour of Islay, produces a highly aromatic character from its ancient heather base. Added refinement comes from the exclusive use of sherry casks, producing a final whisky that is smoky, fragrant and extremely rich in flavour.

In February 1565 Mary, Queen of Scots, spied Lord Darnley through a courtyard window at Wemyss Castle in Fife. Her view of him was evidently a very favourable one, as the pair would marry less than six months later. Fatefully the fruit of their union would ultimately forge a United Kingdom through their son James, King of England, Scotland and Ireland. Produced by Wemyss Distillery, the Darnley’s gin pays homage in name to this historic meeting. James took disparate kingdoms and from them tried to build a Britain greater than the sum of its parts. Darnley’s in turn make gin intended to meld the best of the distilling traditions of both England and Scotland.
London Dry in style, the Darnley’s gins use a more modest number of botanicals than some others, with the aim being balance and for every ingredient used to be detectable and enjoyable.

With the nation recovering from economic doom and gloom, Kiwis have been patriotically lending their support to local industry and produce. From a drinks perspective this is fine, and very easy these days if you are a wine drinker or gin enthusiast of course; but what if you are usually a patron of, shall we say, rather more Celtic distillations? Whisky production, with its requirement for specific barleys and time in barrel, is a daunting and complex task. Luckily for us all, some intrepid New Zealanders have nevertheless dutifully taken up the mantle of producing some fantastic whisky. At the forefront with this new wave of artisan distillers is Thomson Whisky. Founded in 2014, the Auckland based and proudly 100% New Zealand owned and operated company have gone from strength to strength. Originally Mat Thomson and his team operated as independent bottlers for spirit produced in Dunedin’s Willowbank Distillery; these days they blend and bottle whisky produced from their own hand-beaten copper still. For a glimpse into what Thomson is all about look no further than the Manuka Smoke Whisky. An homage to the smoky classics of Islay, but using a fresh and wholly Kiwi twist with the use of native manuka in the smoking process, this whisky reflects a fresh attitude that both honours tradition and isn’t afraid to experiment. Not to be left behind by the country’s insatiable thirst for craft gins Thomson also produce two of their own.
