After delighting your guests with your canapes, it's time to turn the flavour up a notch with one of our alcohol-infused favourites: Pasta à la vodka! We can't decide if it tastes better with Cruz Vodka or Count Pushkin Vodka ; but we can guarantee that this restaurant-quality dish will be a hit with your guests - and it's really easy to make too, so order your favourite vodka from thesipcollection.co.za and let's get cooking:
1. Boil 1 heaped cup of pasta in salted water for 12-13 mins (we recommend penne or shell pasta) / Save half a cup of the pasta water for the sauce!
2. Heat up 2-3 tbsp olive oil in a frying pan, add half a finely chopped onion - fry until soft, grate 2-3 garlic cloves and stir in, allow to fry for 1-2 mins.
3. Reduce heat, stir in 3 tbsp tomato paste and cook for 2 mins, before stirring in 1 tsp dried chilli flakes, 1/2 tsp freshly cracked black pepper, and salt to taste - allow flavours to combine.
4. Stir in 1 tsp white sugar (and for a spicy kick, add 1/4 tsp red chilli powder)
5. Once sugar has dissolved, add 100 ml double thick cream - and a shot (or two) of your favourite vodka! Stir and cook for 2-3 min, allowing the alcohol to cook off.
6. Once the sauce thickens, turn heat all the way down & stir in 1/2 tbsp butter, before stirring in your 1/2 cup pasta water.
7. Add in your drained pasta to the sauce & stir, before mixing in a generous amount of Parmesan cheese. Finally, garnish with some freshly chopped basil leaves - Bon Appétit!
