TF Gingerbread Scones 🍪✨
Warm up your holidays with the deliciously cozy aroma of these gingerbread scones! Infused with warming spices, a touch of molasses, and a sprinkle of festive sugar and pecans, these scones are the perfect treat for your winter gatherings.
Ingredients:
1/2 cup cold cubed margarine
2 cups pastry flour (or oat flour)
1/4 cup TF hydrolyzed collagen
1/4 cup brown sugar (or coconut sugar)
2 tsp baking powder
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup plant-based milk
2 tbsp vanilla extract
5 tbsp light molasses (or honey)
Sugar & pecan nuts to decorate
For the frosting:
1/2 cup icing sugar
1-2 tbsp coconut milk
Method:
Grate the margarine into the dry ingredients, then use two forks to incorporate the margarine into the flour mixture.
Add the milk, molasses, and vanilla extract, and mix until a shaggy dough forms.
Turn the dough out onto parchment paper and flatten it into a circle about 1 inch thick. Freeze for 10 minutes.
Preheat your oven to 180°C). Once chilled, cut the dough into 8 wedges and arrange them on a baking sheet.
Sprinkle sugar over each scone and bake for 14-16 minutes until golden and fragrant.
Cool on a wire rack, then drizzle with frosting and top with pecans.
