Spinach Potato Pancakes
I am home alone with my niece!
These pancakes are great for breakfast or served up with a main meal or to have as a snack on the run!
Can be eaten warm or cold so they make great lunchbox treats!

Ingredients
2 medium potatoes washed, peeled, boiled and chopped
1 medium onion, washed, peeled and chopped
1 cup spinach, washed and chopped
3 tablespoons flour
2 eggs - it's meat free do I used a couple if spoons of plain yogurt
1-2 tablespoons minced garlic
salt and black pepper to taste
some chili flakes (optional)
oil for shallow frying

Instructions
Chop 1 potato and mash one
Wash, peel and chop onion
Wash and chop spinach
In a small bowl, mix all ingredients until well combined.
Heat frying pan on medium heat, adding enough oil to coat pan
Measure out 1/4 cup of mixture for each pancake (mixture should make 6 small pancakes)
Flatten into a small patty (3 should fit on the pan)
Flip patties when slightly brown on one side (3-4 minutes)
Eat warm or cold as lunch, dinner or a on the go snack!

This delicious chocolate cake was decorated by my handsome son, the outer was literally like a chocolate Crust, inside a moist almost brownie like texture. 🍫❤️❤️❤️

❤️❤️ So I baked my own vegan wedding cake, what fun that was, used Bakes Vegan carrot cake recipe and added sultanas and doubled the walnuts 😂🥕🥕😋🍰 🌹🌹🌹
