The food that we know as Brown people 🥰🥰🤌🏽🤌🏽🤌🏽 Beef stew, Creamy samp, Creamy spinach and Buttery butternut 🤌🏽🤌🏽🤌🏽🤤🤤
The Stew:
1.2kg Stewing beef cut into pieces
1/4 Cup Canola oil
Sea Salt and pepper (freshly ground black pepper)
2 Tbsp Tomato paste
1 large onion chopped
1 Cup chopped celery
1 Cup carrots chopped into very small cubes
6 garlic gloves minced
2 Tbsp of Fresh rosemary and Fresh Thyme chopped
1 Cup Excellent red wine- I used Optima 2018😋😋
4 Cups Beef stock
5 Carrots thickly sliced
800g Baby potatoes cut into two
About 8 baby marrows (optional)
2 Tbsp Corn flour mixed with 1/4 cup water (slurry)
In a large pot or dutch oven, heat the oil and fry the meat on high heat, we are not cooking it but we are browning it. Cook in batches, do not overcrowd your pot. Transfer the meat to a plate and set aside.
In the same pot, reduce heat, add onions and cook until translucent, add celery and chopped carrots and cook until just about soft. Add garlic and fresh herbs. Cook for another minute or so. Add tomato paste and give it a stir. Add some salt and pepper. Return the meat to the pot and give it a stir. Add the wine and the stock and let this cook for an hour on low heat. Now add potatoes and cook for 20mins, add the thick carrots and cook for further 15 mins. Add the Corn flour slurry and the baby marrows and cook for about 7 mins and check salt levels then you have the best Beef stew ever 🥰🥰🥰😋😋🤌🏽🤌🏽 This recipe can be halved , this can serve 10 adults.
