🍀 Guinness Roast Leg of Lamb - St. Paddy’s Day Special! 🍀

Get in the festive spirit with this rich and savory Guinness Roast Leg of Lamb! Perfectly tender lamb, simmered with Guinness beer, potatoes, and aromatic herbs — it’s the ultimate comfort dish for your St. Patrick’s Day feast! 🇮🇪

🛒 Ingredients:
• 2 teaspoons kosher salt
• 1 teaspoon coarse ground black pepper
• 1 teaspoon dried thyme
• 4 cloves garlic, minced
• 2 pounds baby potatoes
• 1 large yellow onion, diced
• 1 cup beef broth
• 1/4 cup tomato paste
• 12 ounces Guinness Beer (available at Friendly Fine Wine & Spirits) 🍺
• Lamb shoulder or shanks (pick up fresh cuts next door at Shaws)

🥄 Directions:
1️⃣ Preheat your oven to 325°F.
2️⃣ Season the lamb shoulder with kosher salt, pepper, and thyme.
3️⃣ Heat canola oil in a pan until hot, then sear the lamb shanks for 4-5 minutes on each side.
4️⃣ Remove the lamb, add diced onions to the pan, and cook for 4-5 minutes until translucent.
5️⃣ Return the lamb to the Dutch oven.
6️⃣ Add garlic, potatoes, beef broth, tomato paste, and Guinness beer.
7️⃣ Cook in the oven for 3-3 ½ hours until the meat is tender and falls apart easily.

🍀 Shamrock-rita: The Perfect St. Paddy’s Day Sip! 🍀

Get in the St. Patrick’s Day spirit with this festive Shamrock-rita! A zesty blend of tequila blanco, sour apple schnapps, and triple sec, this cocktail brings a vibrant green glow to your celebrations. Topped with a glittering rim of sparkling sugar and crowned with a charming shamrock apple slice, it’s both delicious and Insta-worthy!

🍸 Ingredients:
✅ 1 1/2 oz. Tequila Blanco
✅ 1 oz. Sour Apple Schnapps
✅ 1/2 oz. Triple Sec
✅ 1/2 oz. Fresh Lime Juice (plus more for apples)
✅ 1 Granny Smith Apple (for that adorable shamrock garnish!)
✅ 1 Lime Wedge
✅ Sparkling Sugar & Sea Salt (for the glass rim)

🧑‍🍳 Directions:
➡️ Step 1: Slice the apple from top to bottom into 1/4”-thick rounds. Use a 2” shamrock cookie cutter to cut out shamrock shapes. Toss the apple slices in lime juice to prevent browning.
