Here’s what I know, it is from Canada, definitely a high (very high) corn mash, 15years old, non-chill filtered, and slightly less ABV than indicated on sample ( still over 120proof ). So, Hunt & Gather does not know source, they are not hiding source, they just don’t know. And thank goodness, because knowing the pedigree would increase the price! I also know it is delicious! No, this is not bourbon, nor is it trying to be. To me, this is corn whisky aged in a neutral barrels and allowed to come to full maturity. The whisky is full of mellow sweetness, with rounded edges and no burn. If you’re into discovering new tastes and the broader characters of whisky then let me introduce you to your new Canadian Whisky that no one will believe is yours.
