Panko Crumbed Chicken Schnitzel
Ingredients:
2 large chicken breasts, halved horizontally to make 4 fillets
1/2 cup plain flour
2 eggs, beaten
2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese
Salt and pepper, to taste
1/4 cup vegetable oil (for frying)
Lemon wedges, to serve
Instructions:
Place the flour in a shallow bowl. Season with salt and pepper.
Place the beaten eggs in another shallow bowl.
Combine the panko breadcrumbs and grated Parmesan cheese in a third shallow bowl.
Coat each chicken fillet in the flour, shaking off any excess. Then dip into the beaten eggs, allowing any excess to drip off, and finally coat in the panko breadcrumb mixture, pressing the crumbs onto the chicken to adhere well.
Heat the vegetable oil in a large frying pan over medium-high heat.
Cook the chicken schnitzels in batches for 3-4 minutes on each side, or until golden brown and cooked through. You may need to add more oil between batches if necessary.
Drain the cooked schnitzels on paper towels to remove excess oil.
Serve immediately with lemon wedges.
