What exactly is a Kölsch? Kölsch is actually a unique hybrid of ale and a lager. This crisp, golden, slightly hoppy beer is fermented with top-fermenting ale yeast—which creates delicate, fruity aromas—but fermented at a cooler temperature range of 59-68 degrees. Kölsch is a rare beer style that has a protected geographical indication (similar to Parmigiano Reggiano or Champagne), which means a Kölsch may only be called a "Kölsch" if it was made in Cologne, Germany, and brewed according to the guidelines of the Köln Brewery Association. Kölsch is traditionally served in a small 200ml, straight-sided glass called a Stange (pronounced shtang-eh). In a Cologne Brauhaus, the waiters automatically come by with another glass as soon as you are almost finished, and keep track of your glasses by marking your coaster. You'll keep receiving Kölsch until you place your coaster on top of your empty glass.
