Castlebridge Wines is a dynamic, woman-owned wine company founded by Tanika Wilson with a mission to highlight fresh, approachable, and quality-driven wines from across the globe. The "De Soleil" line reflects the vibrant energy of sunny afternoons and joyful gatherings, offering modern packaging and an inclusive spirit. Committed to sustainability and accessibility, Castlebridge focuses on small-lot production, minimal intervention practices, and a curated selection that appeals to both casual sippers and seasoned enthusiasts. The "De Soleil" Sparkling Rosé in Can represents the brand’s ethos perfectly—elevated yet unpretentious, and designed to be enjoyed anywhere.
Vineyard Notes:
The grapes for the 2021 "De Soleil" Sparkling Rosé were sourced from coastal vineyards in California, where marine influence ensures cool nights and moderate daytime temperatures. These growing conditions are ideal for preserving acidity and developing aromatic complexity in red-skinned varietals like Pinot Noir and Grenache. The vines benefit from sandy loam soils that provide excellent drainage and promote balanced vine vigor. Sustainable farming practices were employed throughout the season, focusing on canopy management and minimal irrigation to encourage concentrated flavor development while respecting the surrounding ecosystem.
Production Notes:
Crafted in the Charmat method to retain freshness and highlight fruit-forward vibrancy, the 2021 "De Soleil" Sparkling Rosé is a carefully balanced blend of Pinot Noir, Grenache, and a splash of Syrah. The base wine was fermented in stainless steel to preserve its natural aromatics, then underwent secondary fermentation in tank to achieve fine, persistent bubbles. After a brief period on the lees to enhance mouthfeel and texture, the wine was lightly filtered and canned under pressure to ensure optimal freshness. The decision to can this sparkling rosé supports Castlebridge’s commitment to portability and environmental responsibility.
Tasting Notes:
Pale salmon-pink hue with a slight copper shimmer
Aromas of wild strawberries, watermelon rind, and pink grapefruit zest
Bright, crisp palate with flavors of fresh raspberries, white cherry, and lemon blossom
Delicate mousse with refreshing acidity
Dry finish with a subtle hint of sea spray minerality
Serving Suggestions:
The "De Soleil" Sparkling Rosé is perfect straight from the can, but can also be poured into a flute or tulip glass to appreciate its vibrant color and fine bubbles. Serve well chilled, ideally around 40–45°F, for maximum refreshment. This sparkling rosé pairs beautifully with charcuterie, fresh salads, ceviche, grilled shrimp, or a basket of crispy fried chicken. It’s also an ideal companion for picnics, beach days, rooftop brunches, and any casual moment that calls for a celebratory sip.

The "De Soleil" Rosé is a celebration of California sunshine and the joy of gathering, created for moments that invite conversation and connection.
Vineyard Notes:
The grapes for the 2021 "De Soleil" Rosé were sourced from sustainably farmed vineyards in California's Central Coast and inland valleys, where long sun-filled days and cool evening breezes help preserve acidity while allowing full flavor development. These vineyards are known for their well-drained soils and moderate climates, ideal conditions for growing vibrant red varieties destined for rosé production. The combination of warm days and coastal influence yields grapes with bright fruit character, balanced sugar levels, and fresh acidity.
Production Notes:
The 2021 vintage was crafted using the direct press method to retain delicate aromatics and freshness, followed by a cool fermentation in stainless steel tanks to enhance brightness and preserve fruit purity. A blend of Grenache, Syrah, and a touch of Mourvèdre gives this rosé its pale pink hue and layered complexity. The wine was aged on fine lees for several weeks post-fermentation to enhance mouthfeel and texture, with minimal intervention to let the fruit speak for itself.
Tasting Notes:
Pale salmon pink color with brilliant clarity
Aromas of wild strawberry, watermelon rind, and white peach
Subtle floral notes of hibiscus and rose petals
Fresh and lively on the palate with citrus zest and crushed raspberry
Hints of minerality and sea spray on the finish
Crisp acidity and a smooth, clean texture
Serving Suggestions:
Serve chilled at around 50–55°F (10–13°C) to fully appreciate the wine’s delicate fruit and floral nuances. The Castlebridge "De Soleil" Rosé is ideal as an aperitif or paired with light fare such as grilled shrimp, citrus-marinated chicken, summer salads, goat cheese, or charcuterie. It's also a perfect companion for brunches, picnics, or sunset gatherings—any setting that calls for a touch of elegance and refreshment.
Castlebridge Wines is a Black-owned winery committed to producing high-quality, expressive wines that reflect both tradition and innovation. Founded by Tanika Wilson, Castlebridge is deeply rooted in the belief that great wines begin with thoughtful stewardship of the land and a passionate, hands-on approach to winemaking. Based in California, Castlebridge focuses on small-batch wines that are both accessible and complex, designed to bring people together and start conversations. The 2022 Pinot Noir is a standout example of the winery’s mission—crafted with integrity, attention to detail, and a deep respect for the varietal’s elegance and nuance.
Vineyard Notes:
The 2022 Castlebridge Pinot Noir was sourced from sustainably farmed vineyards in California’s Central Coast, where the cool maritime climate and coastal fog create ideal conditions for slow, even ripening. The vineyard’s combination of clay-loam soils and gentle hillside slopes ensures excellent drainage and flavor concentration. These conditions preserve the grape’s natural acidity while allowing the development of rich red fruit and earthy characteristics. The 2022 growing season was moderate and dry, yielding smaller berries with intense aromatics and structure, resulting in a vintage of remarkable finesse and depth.
Production Notes:
After hand-harvesting at optimal ripeness, the grapes underwent a gentle de-stemming process to preserve their delicate skins. Fermentation was carried out in small open-top fermenters using native and selected yeasts, with daily punch-downs to extract color and complexity. The wine was aged for 10 months in a combination of French oak barrels, 20% of which were new, to enhance structure and integrate subtle spice notes without overpowering the fruit. Minimal fining and filtration were used to retain authenticity and mouthfeel.
Tasting Notes:
Aromas of ripe cherry, raspberry, and wild strawberry
Hints of baking spice, rose petal, and a touch of forest floor
Silky texture with balanced acidity
Medium-bodied with refined tannins
Flavors of red currant, cranberry, and subtle oak on the finish
Elegant and expressive with a long, graceful finish
Serving Suggestions:
Serve Castlebridge Pinot Noir 2022 slightly chilled, around 58–62°F, to enhance its delicate aromatics and bright acidity. This versatile red pairs beautifully with herb-roasted chicken, mushroom risotto, grilled salmon, or a charcuterie board featuring aged cheeses and cured meats. It’s also a great choice for holiday meals or as a crowd-pleaser for dinner parties, offering enough structure to satisfy red wine lovers while maintaining a freshness that complements a wide range of dishes.

Vineyard Notes
The 2021 Castlebridge Cabernet Sauvignon is sourced from select vineyards in California’s Central Coast, where the temperate climate, warm days, and cool coastal nights allow for balanced ripening and excellent fruit development. The vineyards sit on well-draining, sandy loam soils that promote deep root growth and flavor concentration. The 2021 growing season was marked by moderate weather and low rainfall, resulting in smaller berries with intense flavor and color. Sustainable vineyard practices and minimal intervention ensure the grapes reflect the character of their environment and vintage.
Production Notes
After harvest, the grapes were destemmed and fermented in stainless steel tanks to preserve freshness and varietal expression. Gentle pump-overs during fermentation enhanced color extraction and softened tannins. The wine was aged for 8 to 10 months in a mix of French and American oak barrels, a portion of which were new, to impart subtle vanilla and spice notes while maintaining the fruit-forward character. The result is a well-structured, approachable Cabernet Sauvignon that showcases both varietal typicity and winemaking finesse.
Tasting Notes
Deep ruby color with purple hues
Aromas of ripe blackberry, black cherry, and cassis
Subtle hints of vanilla, mocha, and sweet to***co from oak aging
Full-bodied with a smooth mouthfeel
Juicy dark fruit on the palate balanced by soft tannins and a touch of spice
Lingering finish with notes of dark chocolate and toasted oak
Serving Suggestions
Castlebridge Cabernet Sauvignon 2021 is best enjoyed slightly below room temperature—around 60–65°F—to enhance its layered fruit and oak profile. This versatile wine pairs beautifully with grilled steaks, roast lamb, hearty pastas, and aged cheeses. It also makes a great companion for casual dishes like burgers or barbecue. For a simple yet elegant experience, enjoy a glass with a charcuterie board featuring smoked meats and sharp cheddar. This Cabernet is ready to drink now, but it can also benefit from short-term cellaring over the next 2–3 years.
