Pernil (per neel) is a typical spanish pork roast consisting of a pork shoulder (pork butt) or leg that has been marinated and seasoned overnight with slivers of garlic cloves inserted, homemade sofrito, abobo and sazón rubbed all over. Slow Roast the pork the next day at 250°F until the meat fall apart tender and then the skin or cuero is crispy. The result is a flavorful, and tender meat that will fill your house with a delicious aroma, and your belly with a whole lot of "piggy goodness.
Pernil is the special occasion dish and expected at the Christmas table in Puerto Rico, Dominican Republic and in other Latin American countries' family gatherings.
You can definitely serve it as a main course with the typical sides of rice with pigeon peas (arroz con gandules), rice and beans, sweet plantains or tostones (fried plantains).

WHAT IS A DOMINICAN CHIMI?

Chimi (short for chimichurri) is a Dominican hamburger, a traditional Dominican street food that shares a name with the famous Argentinian chimichurri sauce. Chimi consists of a handmade ground beef patty, grilled alongside onion, cabbage, and tomato. It is served inside a pan de agua bread and drizzled with its signature pink sauce.

Two main characteristics separate the Chimichurri burger from other burgers. One is the bread (generally Pan de Agua, an inexpensive bun similar in texture to French baguettes). The other is using shredded cabbage instead of lettuce. And it never includes cheese.
What is a Dominican hamburger called?
Hamburgers are called hamburguesas in Spanish, but the most popular traditional Dominican burger is chimichurri (chimi for short), a popular street food in the entire country.

What is the Dominican chimi made of?
Dominican chimi is made of beef. The traditional beef party is seasoned and given a distinct red color with spices, grilled alongside tomato, onions and cabbage and served with a pink mayo-ketchup sauce inside a pan de agua (traditional Dominican bread roll).
