Ratatouille and Lot 886 Merlot: A Perfect Pairing

You’ll need:
* 2 red bell peppers, roasted and de-seeded
* 4 tomatoes, concassed (which means boiled and then peeled and de-seeded)
* 1 carrot, peeled and chopped
* 2 cloves of garlic, finely diced
* 1 shallot, finely diced
* 1/4c Merlot
* 1 Chinese eggplant, cut into 1/4” slices
* 1 yellow squash, cut into 1/4” slices
* 1 zucchini, cut into 1/4” slices
* 3 roma tomatoes, cut into 1/4” slices
* Olive oil, I didn’t measure this, I just added enough for my pan and then a drizzle for the top of the dish
* Salt, to taste
* Lemon, to taste
1. Preheat the oven to 375F
2. Roast your bell peppers and add them to a bowl covering them with plastic wrap
3. In a pot boil water and salt. Take your tomatoes and slice a small “X” about 1/2” thick into it. When the water comes to a boil drop the tomatoes in and wait for the X to expand. Add tomatoes to an ice bath and peel, de-seed, and chop
4. Finely chop your carrot, garlic and shallot. In a pan add olive oil and drop in your aromatics, once they begin to look translucent add in your carrots
5. When your carrots soften add in your tomato and bell pepper and let this cook down. When it comes to a simmer add 1/4 cup of Merlot. Let this cook down and add salt to taste
6. Add your sauce into a blender and blend until smooth adding salt and lemon until desired taste
7. In the meantime, cut all of your vegetables to the same size, it’s easier and faster to do with a mandolin but if you don’t have one that is also okay! Once all of the vegetables are cut lay them out and sprinkle salt on them. Wait a few minutes until they begin to look like they’re sweating and blot them dry. Flip them over and repeat.

NYT Cooking Lava Cake Recipe:
3 ounces/85 grams bittersweet chocolate, 70 to 74 percent cacao (not chips), chopped (about ½ cup)
3 tablespoons unsalted butter, cut into cubes, plus more for the ramekin
3 tablespoons granulated sugar, plus more for the ramekin
1 large egg
1 large egg yolk
½ teaspoon vanilla extract
⅛ teaspoon kosher salt
2 tablespoons all-purpose flour
Confectioners’ sugar, to serve (optional)
Step 1
Heat oven to 425 degrees and butter a 10-ounce ramekin. Dust the buttered ramekin with granulated sugar.
Step 2
Combine the chocolate and 3 tablespoons butter in a heat-safe bowl set over a pan of simmering water. Cook, stirring occasionally, until melted and smooth. (Alternatively, combine in a bowl and microwave in 30-second blasts, stirring in between, until melted and smooth, about 1 minute.) Remove from the heat and set aside.
Step 3
In a medium bowl, combine the 3 tablespoons sugar, egg, egg yolk, vanilla and salt. Whisk vigorously until the mixture is thick, foamy and pale, about 2 minutes. Whisk in the flour until smooth.
Step 4
Using a spatula, add the chocolate to the egg mixture and stir gently until combined.
Step 5
Pour the mixture into the ramekin. Bake for 12 to 14 minutes or until the edges are set and puffed, but the center is still soft when lightly pressed. (You can also cover and refrigerate the batter up to a day in advance. Add an additional minute or 2 to baking time if you are baking the cake directly from the refrigerator.)

For the Green Goddess Pasta you’ll need:
* 1 shallot
* 3 cloves of garlic
* 1/4 c chives
* 1/4 c basil
* 1/4 c dill
* 1/4 c green onions
* 1/4 c parsley
* 1 1/2c ricotta
* Lemon, to taste
* Salt, to taste
* Pepper, to taste
* 1 lb pasta of choice
* Boil water and salt it and follow instructions for pasta on the box
* Small dice your shallot and garlic and sauté in a pan until they are translucent and soft, remove from the heat and reserve for later
* Cut your herbs, they don’t need to look great because they’ll be going on a blender anyway
* Add your ricotta into the blender and blend until smooth
* Add in your herbs and blend until combined
* Season with salt, pepper, and lemon juice
* By this time your pasta should be ready, reserve 1/3 c of pasta water and drain the rest
* Combine pasta water and sauce in with pasta and cook until combined
