We recently got to take a 막걸리 makgeolli brewing class at @𝐛𝐚𝐞𝐤𝐮𝐬𝐚𝐞𝐧𝐠.𝐦𝐚𝐤 while in Seoul, South Korea.⁣
⁣
𝘉𝘶𝘵 𝘸𝘩𝘢𝘵 𝘪𝘴 𝘪𝘵? ⁣
⁣
Makgeolli is a fermented rice-based alcohol, often around 13% abv. Its milky color comes from leaving the rice wine unfiltered. There is a lot of variety when it comes to makgeolli, as it can be made with different ratios of rice, different types of nuruk (yeast/mold/bacteria used for fermentation), additional fruits or herbs, and longer or in multiple-step fermentation. All of these options create a broad range of styles with varying effervescence, sweet- or tartness, flavors, mouthfeel, and alcohol levels. ⁣

Unfortunately, as makgeolli is perishable, the vast majority available outside of Korea is pasteurized with additional additives for stability. If you’re ever in Seoul, 𝐰𝐞 𝐡𝐢𝐠𝐡𝐥𝐲 𝐫𝐞𝐜𝐨𝐦𝐦𝐞𝐧𝐝 𝐚 𝐜𝐥𝐚𝐬𝐬 𝐰𝐢𝐭𝐡 𝐉𝐨𝐞 𝐨𝐟 @𝐛𝐚𝐞𝐤𝐮𝐬𝐚𝐞𝐧𝐠.𝐦𝐚𝐤. Not only will you get to taste a multitude of makgeolli that Joe himself crafted, but you’ll also create your own ferment to bring home with you!
