We're not gonna lie....it's been a long week. Since the chef got laid up, this novice chef has had to step up for three meals a day, and the results have been mixed. Good news - we've nailed oatmeal. That may seem trivial to many people, but for us, it's a badge of honor (we have, in the past, really messed up oatmeal). The key is tossing in diced apples, a little cinnamon and a tablespoon of apple butter when the oatmeal is added to the water. Also, patience seems to be key - forget the five minutes it says on the package and let that oatmeal simmer for at least twenty. Now that we're an expert on that, we'll move on to other accomplishments.
We were able to use up all of that chicken from last week's Stuffed Chicken fail. It's amazing how many things are better when you add in chicken - salads, enchiladas, sandwiches. Our best, by far, was Chicken Stir Fry, which was actually delicious. We found a recipe that included the word "easy," and it was a winner. We added some extra heat (the chef loves heat!), and it was so good there weren't even leftovers! Our chef tip of the week - when making our brown rice for the stir fry: The ratio of water to brown rice is 1 cup rice to 2 1/4 cups water. Put a tablespoon of butter in a saucepan and add the rice - stir to coat. Add in water and bring to a simmer. Cover the saucepan and place in a 350° oven for 45 to 55 minutes, fluffing as needed. Came out perfect! We are hopeful for another week of relative success in the kitchen. We'll continue to Google search for recipes that start with easy and hope they are true to their word!

This simple baked version makes a lovely Hannukah dessert...

Baked Sufganiyot Donut

2 1/2 c all-purpose flour
1/4 c granulated sugar
1/2 tsp salt
2 tsp yeast or 1 packet
pinch of nutmeg
1 egg
3/4 c milk, warmed to about 100 degrees
2 tbl oil
1/2 tsp vanilla extract

2 tbl butter, melted
sanding sugar
jelly (optional)

In the bowl of a stand mixer, combine the dry ingredients - flour, sugar, salt, yeast, and nutmeg.
In a small bowl, whisk together the wet ingredients - egg, milk, oil, and vanilla.
Pour the wet ingredients into the dry and knead with the bread hook for 8 - 10 minutes. (If kneading by hand, plan on about 12 minutes.)
When finished kneading, transfer dough to a lightly greased bowl and cover with plastic wrap.
Let rise for 60 - 90 minutes, until the dough is almost doubled in size.
Line a baking sheet with parchment.
On a lightly floured counter, gently stretch or roll out the dough to 1/2" thick.
Using a biscuit cutter or glass, cut into 2 1/2" - 3" rounds. (Re-roll until you've used all the dough - makes about 8 donuts)
Place rounds on prepared baking sheet.
Cover with plastic wrap and let the dough rise for 30 - 45 minutes.
Preheat oven to 350 degrees.
Uncover the pan and bake, in the middle of the oven, for 13 - 15 minutes.
Remove from oven and sugar coat the donuts while still warm - brush with butter and dip top in sanding sugar.
Traditional Sufganiyot are often filled with jelly. If going to fill, allow the donuts to cool before piping jelly into the center.
Filled or sugar-coated, Sufganiyot are a delicious Hannukah treat!

This year, we added a few cookies we've never attempted before into our holiday baking. One of these is the Empire Biscuit. So pretty and so delicious! This cookie is a Scottish baking tradition and consists of two shortbread biscuits sandwiched together with a filling of raspberry preserves and topped with a simple icing and a cherry. After looking through many online recipes, we've decided to go with this one from AllRecipes 👉https://www.allrecipes.com/recipe/19263/empire-biscuits/ based on reviews and the fact that the recipe is very straightforward (we love the fact that it is only three steps!). After our meringue baking fail a few days ago, we are happy to report that this recipe was a true winner, even at high altitude. The cookies came out perfect, but we did watch them very carefully, as a shortbread cookie can quickly overbake. Also, we aren't very patient with frosting, so we dipped the tops of the cookies into the frosting and then topped with the half cherry. The results were beautiful and delicious! We strongly recommend adding this cookie and recipe to your holiday baking list. Happy baking!

As with all baking fails, we blame altitude. We aren't sure if this is why our recipe from Saturday for Peppermint Meringues didn't work or if it was pilot error (the guy next to us says pilot error), but sometimes you have to stick to the classics. The one thing we noticed about the recipe we shared before was that it was missing two ingredients we have grown accustomed to using in meringues - cream of tartar and a pinch of salt. Perhaps the slow heating and mixing of the eggs and sugar in the new recipe makes up for those ingredients. And perhaps we just didn't do that step correctly. Anywho....we decided to head back to Grandma Clark's Classic Christmas Meringue recipe that has never failed us regardless of the altitude or attitude of the baker. Easy to make. Delicious to eat. Grandma Clark, for the Christmas win!

Exploring Hanukkah's traditions through food has been a delicious journey! Sometimes, we are reluctant to try unfamiliar things, but we are glad we tried Noodle Kugel. Noodle Kugel is a sweet casserole traditionally served on Jewish holidays. While most people serve it as a side, it can also be served as dessert. Made with egg noodles and a creamy custard, this dish can lean more sweet or savory depending on what recipe you are following. Does it seem like there is never enough time in December to watch all your favorite Christmas movies? Breaking the movies into categories sometimes helps us to organize our watch time, and these three hysterical holiday movies are at the top of our "most funny" list! Huge disclaimer upfront - that is NOT our picture of the dinner we prepared last night. That is what we thought our dinner would look like, but we were mistaken. A little context. After being gifted Thanksgiving week off in regards to our once-a-week dinner duties (the chef was cheffing all week long), we suddenly found ourselves responsible for all meals due to the real chef being laid up for two weeks. The panic that ensued wasn't pretty, and we're not proud of that. We attempted to rally last night with what we considered a fancy but manageable recipe for Spinach & Feta Stuffed Chicken Breasts. It looked so easy on TV and, for most novice chefs, would probably have been a winner. But for this novice chef it was anything but. What did we learn? That measuring is important. If a recipe calls for two cups of spinach, throwing in four because it's what we bought isn't a great idea. Also, when they give you an estimated amount of cooking time, setting a timer would be nice. The good news - the chicken was definitely cooked all the way through.
All in all, it was not our best night in the kitchen but it wasn't the fault of the recipe that we saw on the Today Show 👉https://www.today.com/recipes/spinach-feta-stuffed-chicken-breast-recipe-t295232 and, once the chef is back up on his feet we will ask him to make it because it looked so potentially yummy. Food, like symbolism, is integral to most of our traditions. Hanukkah is no different. Fried foods like Potato Latkes are customary in this eight-day winter holiday festival because they symbolize the miracle of Hanukkah. Latkes are often unfairly compared to potato pancakes, which are nothing but raw grated potatoes, egg and flour and have a creamy, almost mashed potato consistency. We all have our special holiday traditions, many of which are tied to food. Christmas cookies, cakes, savory bites, and more that have been handed down through generations of family. And, because the United States is such a melting pot of cultures, many food traditions from other countries have been shared here. Not all, however, have gone "mainstream". Take, for instance, the deliciously sweet Mince Pies from England. Perfect for the season...

Herb Pull-Apart Bread

2 3/4 c bread flour
3/4 c warm water, about 105 degrees
1/2 stick unsalted butter (4 tbl), room temp
1 large egg
1/2 tbl salt
1 tsp instant yeast
1/4 c chopped fresh parsley
1/2 tsp dried oregano

Olive oil, about 2 - 3 tbl

1/4 c chopped basil
2 tbl butter, melted
salt

In the bowl of a stand mixer, combine the flour, water, 1/2 stick of butter, egg, salt, yeast, parsley, and oregano.
Mix on low speed until the flour is worked in.
Increase to medium speed and knead for 8 to 10 minutes. (If kneading by hand, plan on about 12 minutes.)
When finished kneading, transfer dough to a lightly greased bowl and cover with plastic wrap.
Let rise for 1 hour. The dough will be puffy, but probably not doubled.
Brush a bundt pan with olive oil.
Divide dough in half and roll each half into logs about 12" long.
Cut into 1" pieces, so you have 24 sections. Roll each section of dough into a ball and place into the prepared bundt pan. Brush olive oil on the dough before you place another piece on top of it.
Cover the bundt pan with plastic wrap and let the dough rise for another hour.
Preheat oven to 350 degrees.
Uncover the pan and bake, in the middle of the oven, for 25 - 30 minutes.
Invert bread onto large plate.
In a small bowl, combine the melted butter and chopped basil.
Brush the butter mixture on top of the bread and sprinkle with kosher salt or flake salt.
Serve warm : )

Our Story

Clark’s Market purchased this Village grocery store in June of 2018 and set upon the task of completely renovating and remodeling the space into a beautiful Market, focusing on quality, healthy products and full service departments offering some of the most innovative and creative fresh food available. Featuring a wood fired pizza oven, handmade tortilla station, Villa Dolce Italian Gelato wheel, Certified Angus Beef, Wagyu Beef and the most freshly sourced seafood available in the area combined with the highest quality conventional and organic produce, Clark’s Market Sedona strives to provide our community and our customers with the freshest food choices and first class customer service.
