COVALE CELLARS 2020 Cabernet Sauvignon
Quintessence Vineyard, Red Mountain

After almost 30 years of winemaking, primarily with Washington’s iconic Quilceda Creek Vintners, and then a short retirement, Marv Crum returned to his passion in 2017 after a close group of friends convinced him to make a barrel of Cabernet Sauvignon.

The fruit was sourced from the Quintessence Vineyard on Red Mountain. These grapes were fermented in fruit bins in his garage and then aged in new French Oak barrels. The resulting wine confirmed to him that he had a high-quality grape source and was able to make a great wine from it, and he realized then that he needed to start making wine commercially again.

Marv did just that in 2020 with his wife Susan, and Covale Cellars was created. In the past 3 years he has created wines with exceptional flavors, aromas and color. The result is high quality Cabernet Sauvignon that is intense, rich and complex.

A new winery to us, this may well become the Next Big Thing in Washington boutique wineries. Not yet rated by the major publications, when it is reviewed it will undoubtedly make a huge splash and become very difficult to obtain.

COVALE CELLARS 2020 Cabernet Sauvignon is a beautiful deep ruby color with aromas of black cherry, cassis, vanilla, cedar, and spice. On the palate, it is full-bodied, rich, and smooth, with layers of dark fruit, chocolate, coffee and toast. The tannins are firm but well-integrated, giving structure and balance to the wine. The finish is long and lingering, with hints of licorice and mint. This Cabernet is impressive for its intensity, complexity, and elegance. This is a wine of distinction. It shows the potential of Red Mountain Cabernet Sauvignon at its best and can be enjoyed now or cellared for another 10-15 years.

97% Cabernet Sauvignon, 3% Cabernet Franc, 350 Cases produced.

🐰Belle Glos 2022 'Oeil de Perdrix' Rosé🐣

A delightful wine that exudes elegance and sophistication. On the nose, it offers a complex bouquet of ripe strawberries, raspberries, and watermelon, along with floral notes of rose petals and orange blossoms. The fruit aromas are complemented by a subtle hint of spice, which adds a layer of depth to the wine.

On the palate, the Sonoma Rose 2022 is crisp and refreshing, with vibrant acidity that balances the wine's sweetness. The flavors of fresh red berries are pronounced, with a slightly tart finish that lingers on the tongue. The wine has a medium body and a silky texture that makes it easy to drink.

The perfect 🌸springtime🌼 red has arrived just in time.

91 points, James Suckling:
"A very pretty, bright red with redcurrant and violet character. Medium-bodied, delicate and refined.”

Lydia Coudert, a fifth-generation winemaker, is the estate’s first female winemaker and manages the vineyard and all export sales. She has led the effort to make the winery environmentally friendly.

A local educational institution purchases the cooking wines used in their central kitchen from us, and it has to be vegan by decree of institutional intent. We’ve also been receiving an increasing number of inquiries from our daily customers as to what “Vegan Friendly” wines we carry or can get. For the benefit of those who don’t know, the term “vegan friendly” means that the product in question is free from animal matter, animal-sourced ingredients, and hasn’t been created with animal exploitative methods.

For the wines we get, very few state on their labels that they are indeed vegan friendly, even if they are. It seems to currently be used most frequently by wineries from central Spain that are run by a younger generation of the family, one that has a greater awareness of the importance of including this information, and we see this trend of wanting to know just what goes into our bodies further developing not only in the “grocery” world, but in the wine world as well.

So, after saying “Huh? I dunno who’s vegan. They don’t talk about it” to ourselves for a bit, we decided to do some research. One thing we have discovered is that there are a great many wineries that produce wines that qualify as vegan friendly, even if they do not state it on their labels. To be certified by a third-party organization costs a lot of money, so they don’t go there. The Vegan Society and The Vegan Awareness Foundation and others may certify products as vegan, which are then labeled with a certification, but a requirement to plainly state the fact has yet to pe*****te the broad producer market as necessary or the regulatory system as a requirement when it comes to wine production.

We came across an outstanding source guide that can be used to help identify vegan beer, wine and liquor called barnivore.com. There are literally hundreds of wineries they have vetted regarding the choice not to use animal byproducts such as egg white or isinglass (from fish bladder), etc. to clarify or filter their wine.

We have employed this site to help us plainly identify for you wines in our assortment that may qualify. They come from all countries and regions, in all categories, and at every price level.

When you shop at Pete’s, look for the small round orange sticker placed on the shelf tag of a wine that is marked with a “V”. You might be surprised to find that the wine you’ve been enjoying all along is vegan after all!
