December is filled with holiday merriment, parties, feasts, and lots and lots of Christmas cookies! ππͺ For those that are celebrating with a good old fashioned cookie exchange, or simply for those that love to bake and enjoy cookies over the season, Sphinx Date Co. shares a Classic Date Ball recipe in celebration of the holidays!
Date balls are believed to have originated in the Middle East and they remain a time-honored tradition with many variations depending on the household. Some are dusted in powdered sugar while others are rolled with coconut flakes. Regardless of how they are made, puffed rice or crispy rice cereal, such as Rice Krispies, is a key component. The great part about any date ball recipe is that there is no baking involved β so itβs a great recipe to make, and a great tradition to start, with the kids this holiday! The basics of a classic date ball recipe are as follows:
π Ingredients
8 oz. fresh dates, pitted Β½ c. butter
1 c. granulated sugar
3 c. crispy rice cereal (get creative with varieties such as cocoa, frosted or cinnamon sugar Rice Krispies)
1 c. chopped nuts of choice (such as pecans, walnuts or pistachios)
1 tsp. vanilla, almond or orange extract
Β½ c. confectionersβ sugar or coconut flakes for rolling
β€οΈ Directions
Add dates, sugar and butter to a medium saucepan and cook over low heat until the sugar fully dissolves
In a large bowl, add crispy rice cereal, nuts and vanilla or extract of choice.
Remove date mixture from heat and slowly fold into the crispy rice mixture.
Pour confectionersβ sugar or coconut flakes into a shallow bowl.
Roll date/rice mixture into golf-ball size, then roll into confectionersβ sugar or coconut flakes.
Place on wax paper to set until all mixture is used. Then store or enjoy!
This recipe makes about 24 date balls and they can be easily whipped together to give as a hostess gift
or to add to a charcuterie board as a sweet treat. ππ¬

Dates are a delicious part of the π fall harvest and can be enjoyed in so many ways. π΄ This Thanksgiving, why not consider making dates a part of the feast? Sphinx Date Co. offers the following four ideas for incorporating delicious Medjool or Black Sphinx Dates into the Turkey Day meal. ππ½οΈ
π₯¬ Start with Salad β A simple green salad is a great way to start a Thanksgiving meal (or to cleanse the palate during the feast). Dates can be added to a green salad to add a chewy texture and pop of flavor. To make an easy toss-and-serve salad, think spring mix or a favorite variety such as spinach or arugula, a few crumbles or feta cheese, nuts like walnuts or pecans (which can be dry pan-roasted with a teaspoon of sugar for a quick candied version), and some chopped dates.
π§ Offer an App β With its pit removed, dates provide a perfect little vessel to stuff with cheese or olive tapenade. For a quick and delicious savory date appetizer, stuff some blue cheese or goat cheese into the cavity, then wrap the dates with prosciutto or bacon and bake until cheese is bubbly and bacon gets a little crispy. For a sweeter version, mix cream cheese with honey and a bit of orange zest (reserve some for topping), then simply stuff and serve. Warning: these are dangerously good and oh-so-poppable, so make plenty!

π₯ Make a Date Dip β Consider a healthier, all-natural substitute for sugary caramel for apples this season by creating a delicious date dip or paste. Delicious spread on a healthy muffin, apple or pear slices, or enjoyed by the spoonful, this dip will disappear fast! Start by soaking dates in warm water for about 10 minutes, then place the dates in a blender or food processor with a little bit of the βsoaking water.β Add a little at a time to achieve the desired consistency, then store in an air-tight jar in the refrigerator. Add cinnamon, pumpkin pie spice, or apple pie spice for a little extra kick of fall flavor.
π₯ Pair βem with Potatoes β Roasted root vegetables, gourds, and tubers are synonymous with fall. They are not only easy to make, they can be jazzed up in 100 different ways. Simply rough chop some favorite veggies (butternut squash, yams, onion, beets, turnips, carrots, potatoes, etc.) and dump them onto a sheet pan drizzled with olive or avocado oil. Drizzle the veggies with a bit more oil, plus some salt, pepper, and any other seasonings, then roast in a preheated 400-degree oven until desired color and texture are achieved. Once done, top with parmesan cheese, a drizzle of balsamic olive oil, and chopped dates. Serve alongside a hearty steak or roast or enjoy them as the main entrΓ©e served with an autumn-inspired salad.

π Ingredients
3 cups Medjool Dates, pitted
ΒΌ cups Sugar, granulated
1 Β½ cups Water
ΒΎ cups Butter or Shortening
1 cup Brown Sugar
1 ΒΎ cups Hayden Flour Mills All Purpose Flour
1 tsp. Salt
1 tsp. baking soda
π Method
1. Preheat oven to 400 degrees.
2. For the filling, combine dates, sugar,Β and water in med/large sautΓ© pan.
3. Cook at medium-low heat for 10 minutes, stirring occasionally.
4. Set aside to cool. Puree if desired.
5. To make the crust, beat shortening or butter in large bowl with brown sugar.
6. Add flour, baking soda and salt to brown sugar/butter (in small amounts), mixing or cutting w/ pastry cutter.
7. Add oats and stir to combine.
8. Grease a 13 x 9 baking dish.
9. Pat Β½ of the crust along the bottom of the baking dish.
10. Spread filling evenly, leaving 1-2 cm. space from the edge. This helps to keep bars from sticking to the edge.
11. Take remaining crust and sprinkle over the filling until covered.
12. Bake for 25-30 minutes or until top is lightly browned.
13. Cool before cutting and serving.

π Ingredients
1 lb. Fresh Strawberries
1/4 Cup Dates
1 Tbsp. Lemon Juice
π Method
β’ Cook dates in water for 10-15 minutes over medium-low heat, stirring often.
β’ Reduce to a paste, remove from heat and cool.
Add all ingredients to food processor to blend.
β’ Pour in an 8x8 glass baking dish and freeze for 4 hours.
β’ Remove from freezer and pulse mixture in food processor to break up.
β’ Put mixture back in 8x8 dish and freeze for another 2 hours.
β’ Serve with a mint or lemon garnish & enjoy!

As the weather heats up, itβs time to reach for some cool treats! π¨ As an alternative to rich, dairy ice cream, βnice creamβ hits the spot without resulting in a sugar-crash later. Sphinx Date Co. shares some tips on how to create the best nice cream for a refreshing treat on a hot summer day. π
Keep it Simple β A basic nice cream recipe doesnβt involve too much hassle (after all, summers are meant to be hassle-free!). So keep it simple! π Frozen bananas serve as the base of a delicious nice cream. The riper the banana when frozen, the sweeter tasting the result will be. (Of course, the sweetness will also depend on flavors and other additions). So those bananas that never got eaten before they turned brown can still be given a second life through nice cream (which is way less intensive than making banana bread anyway!).
Blend it up β Before blending, let the frozen bananas thaw just a bit to make it easier for the blender to break them down. Add a few π΄ chopped dates and some flavoring such as πΆ vanilla or almond, a teaspoon should do it, to the blender and mix. A few splashes of π₯ almond milk (or milk of choice, non-dairy or otherwise), can help loosen up the mixture if the blender is having a hard time getting though, but the consistency should remain thick. The end result should be like a soft-serve ice cream. For a more traditional ice cream consistency, put the mixture into the freezer for about a half hour after blending. Consider freezing the nice cream into π‘ popsicle molds for easy snacking after a dip in the pool or a quick dessert. (*Tip: reconstitute the dates in a little bit of water prior to adding them to the mixture to get a smooth, silky end product.)

Ingredients
π₯ 10 Bacon (slices)
π΄ 1 cup pitted Medjool Dates, diced
π₯¦ 3.5 cups fresh Broccoli, but into bite size pieces

1/4 cup Red Onion, chopped
β€οΈ1/2 cup dried Cranberries
πΆ 3 Tbsp. White Wine Vinegar
π― 2 Tbsp. White Sugar or Honey
π€ 1 cup Mayonnaise or Tahini (add water to thin)
π» 1 cup Sunflower Seeds
Method
1οΈβ£Cook bacon until crisp, drain, crumble and set aside.
2οΈβ£ In a medium bowl, combine broccoli, onion, cranberries and dates.
3οΈβ£ In small bowl, whisk together vinegar, sugar, mayonnaise (or tahini).
4οΈβ£ Pour dressing mix over broccoli mixture. Toss well and refrigerate for at least two hours.

In the spirit of ππ back to school and breakfast or lunch prepping and packing, today weβre sharing our protein-packed recipe for Date Energy Balls that is loved by kids and adults alike! π΄ Try replacing almonds for cashews or pecans, or add in other dried fruits or cacao for variety!
π Ingredients
β’ 2 cups Almonds, Raw
β’ 1 cup Shredded Coconut
β’ 2 cups Soft Medjool Dates, pitted
β’ 2 tablespoons Coconut Oil
β’ 1 teaspoon Sea Salt
β’ 1 teaspoon Vanilla Extract
π Method
β’ In a large food processor fitted with an βSβ blade, process the almonds and coconut until crumbly.
Add in the dates, coconut oil, vanilla and sea salt and process again until a sticky, uniform batter is formed.
β’ Scoop into tablespoons and roll between fingers into balls.
β’ Roll finished date balls in shredded coconut.
β’ Arrange them on a baking sheet lined with parchment paper, then place in the freezer to set for at least an hour before serving.
β’ Store in a sealed container in the fridge for up to a week or in the freezer for an even longer shelf life.
