Spectrum Wine traces its history to the founding of Orange County's first wine store - Rolf's Wine & Spirits (first established as Rolf's Grocery) - in Tustin in 1953 by local entrepreneur, sports legend, inventor, and wine pioneer Rolf Engen. Following an early and formidable career in basketball and volleyball (including being recruited to UCLA by legendary 'Wizard of Westwood' John Wooden), Rolf's entrepreneurial passion for wine developed quickly as he found success with his game-changing wine store in Tustin. He duly expanded the original Tustin store in 1956 and later came to expand his retail business to Newport Beach, Placentia, Laguna Hills, Orange, and Irvine. In the 1960s Rolf began traveling to Europe to taste and to source the great wines of France, Italy, and Germany, and he came to be one of the first to import and to sell the great wines of Europe here in Orange County. In 2017, Rolf's Wine & Spirits merged with Orange County-based wine auction house Spectrum Wine Auctions. Spectrum Wine, a nimble, new, 21st-century auction house of fine, rare, collectible, and investment-grade wines led by a deep team of passionate wine specialists and founded as a subsidiary of the Fortune 500-listed auctioneer and global collectibles network Spectrum Group International (SPGZ), had grown rapidly with a global customer list and a consistent series of marquee auctions, including the first sales of the legendary Aubrey McClendon Cellar. “To manage its extensive vignoble, Billecart has 4 viticultural centers — in Oiry, Mailly, Damery, and Aÿ — equipped with 13 tractors, a number that will surely continue to climb, since, from 2020, the house has abandoned the use of chemical herbicides. In the winery, cold fermentation to preserve purity and expressive fruit has long been Billecart's calling card, and that continues today, in 47hl tanks of either stainless steel or wood, maintained at 13°C and with malolactic fermentation completed or not depending on the vintage. Little by little, a barrel program has been established and refined without changing Billecart's DNA: today, 5-year-old barrels are purchased secondhand and initially used for the tailles (heavier press fractions) before they are deemed sufficiently neutral to contribute to cuvées such as the Brut Sous Bois. Another development is investment dedicated to increasing the proportion of reserve wines, which now routinely surpasses 50% for the Brut Réserve (it was more like 35% not long ago). Recent releases from Billecart have been excellent and show all that work very clearly, and surely the upward trajectory will be perpetuated if the house continues to invest in agronomic improvements .... Billecart-Salmon is discreetly but significantly evolving. Since 2010, a new cellar has housed some 400 barrels for vinification and élevage, and since 2018, another cellar is home to oak foudres retaining some 80,000L of reserve wine. Meanwhile, Billecart's wines are spending longer and longer sur latte, and fruit sourcing is changing — with more Grand Cru fruit replacing Premier Cru fruit — while volumes remain the same. Based on the trials underway in their emblematic Clos Saint-Hilaire, the next frontier will be the vineyards.

‣ "The 2019 vino rosso I Nove Fratelli takes a while to blossom, starting out dusty and coy with hints of dried roses and plum. Exotic savory spices come forward with time in the glass, along with notes of strawberry and smoke. In the mouth, it’s soft and fleshy at first, offset by a concentrated mass of tart wild berries and salty minerals under an air of inner florals. Tannins slowly mount, creating a youthfully dry impression through the finale, as sweet herbal notes, to***co and echoes of ripe raspberries linger long. There’s simply so much going on here, yet the 2019 will require some time to come fully into focus. I Nove Fratelli is a blend of 90% Nerello Mascalese and 10% Nerello Cappuccio, from 120-year-old pre-phylloxera vines, fermented with indigenous yeasts and matured in 500-liter oak barrels.

"Chiara Boschis made some of the most thrilling wines of the vintage.

'For me, 2019 opens a new cycle of growing seasons, all marked by intense heat in the summer,' she told me. The 2019s saw two weeks on the skins, followed by malolactic fermentation in steel. 'It is important to me to vinify all the lots the same way so that what comes through is the personality of each site. We do a few pump-overs daily and gently turn the rotary tanks.' The wines were racked into oak between December and January and then raised with no racking. Wines from Barolo and Serralunga are aged in casks, while those from Monforte are raised in smaller French oak casks. In recent years, Chiara Boschis has been at the top. Her 2019s are positively stellar."

From three parcels around the estate of old-vine Grenache that are between 50 and 70 years old. Partially destemmed, fermented in raw cement tanks then aged in old barriques for 12 months.

‣ "This 2018 Casanova di Neri Brunello di Montalcino has very refined, sweet oak-spice with a little hint of vanilla, cream, pepper and cherry. The tannins are very finely-textured but firm and grippy and together with juicy acidity combine into a long, savory, tightly wound palate. There is good concentration here of black cherry fruit, as well as finely integrated oak flavors. This producer makes a firm style of Brunello but of excellent quality and this 2018 is no exception. This wine is not showing his full potential yet and needs more time to open up but already it has a lovely combination of firmness and finesse."

👀 “Pierre Girardin, age 21 and whose first vintage was 2017, is the son of the well-known producer Vincent Girardin who sold his operation in 2011. However, he kept certain vineyards and has now bequeathed them to Pierre to farm. For the reds, whole clusters are used in varying proportions during a 14- to 18-day cuvaison with no punch downs. After a short lees settling, the wines are barreled down for 12 months in oak where the maximum percentage of new wood is 50% and some wines see none at all. The whites see a similar élevage period where there is never any lees stirring in mostly 450-liter barrels.

I have to say that I was impressed with the quality I found here and in both colors. The vinifications are deft with just the right amount of extraction and the style is understated and pure. It is of course helpful to be working with some of the greatest terroirs in Burgundy, but the quality still has to be there. We will of course see how things progress over the next few vintages, but suffice it to say that this young man is a clear talent who bears watching carefully."
