Today's Sake Superstar: Maiyuko Kita! 🍶✨
One of our favorite female Toji's in Japan is Maiyuko Kita from Shiga Prefecture's Kita Shuzo, who is the maker of this killer dry Junmai Ginjo called Kirakucho Chokarakuchi with a 17.5% ABV and an impressive SMV of +14!
Maiyuko says that this brew is perfect with Sashimi and Grilled Meats because of the dryness, but found out that it rocks noodles as well, especially Guilin Noodles to-go!

Last night the crew tried this “Frozen Beauty” that Beau hand carried back from Japan. This sake is from Nanbu Bijin in Iwate Japan. Nanbu Bijin flash freezes this sake to preserve the unpasteurized flavor. The experience and flavor of this sake was incredible. Would highly recommend if you can get your hands on it! -Mei

🌙 Many many moons ago this glorious sparkling sake was not available in the US and it was highly allocated in Japan. But I loved it, and had several empty bottles on display at our old store. And I swore to trying everything in my power to get it for our customers. 💪 Each time I went to Japan I would bring several bottles of @ichinokura_sake "Suzune" back and I started to age them. This proved to be a great idea 💡🧐 Our importer would ask the brewery on our behalf, and each year we would hear the answer that it is too delicate to export. No 🎲 Then I finally said "it's not too delicate and I can prove it!" I had a three year vertical tasting of "Suzune" and let my importer taste them. 🔔 They tasted amazing, they had staying power, and they weren't too delicate 💥💥💥 Lo and behold the rest is sparkling sake history 🥂⏳ We've been selling a ton of Ichinokura "Chiming Bells" Sparkling sake over the years and are very proud of the fact that we played a small part in this outstanding sake's international run! 🌎 Maybe it's time for you to taste a little sparkling history ..... 🤔 #ichinokura #miyagi #sparklingsake #truesake #sakeday2023
