This Junmai Ginjo is made with Yamada Nishiki rice, known as the pinnacle of quality for sake rice. It is named after the famous Chinese poet, Li Po, who was said to drink a bottle of sake and write one hundred poems. Notes of banana and ripe honeydew with a clean, crisp acidity that highlights its light-to-medium body. This long, holiday weekend, we’re reaching for some bright, linear wines to pair with oysters, clams, and grilled seafood. The 2021 J Bouchon Pais Salvaje ticks all those boxes. This extremely unique and singular Chilean wine hails from the dry Maule Valley and is made of Pais Blanco - white berries of Pais, a traditionally red grape, that were found intermingled amongst the wild vines of red berries. Grown organically, fermented with wild yeasts, aged in clay amphora, and bottled unfiltered, this is a gorgeous example of natural wine that shows racy flavors of granny smith apple, bartlett pear, grapefruit and meyer lemon, backed by a lovely saline minerality.

“This is a mutation in the chromatic aspect of the listan prieto variety, known in Chile as país, and mixed in Bouchon's wild vineyards in Mingre—with vines so wild that they climb trees and require ladders to harvest them. This wine is fermented in clay amphorae and then bottled unfiltered. In a very cold year like 2021, the wine's acidity is like a saber in the mouth, slicing the palate with that sensation of citrusy freshness. It has a very good body—it's dense but determined by the acidity that’s the backbone here. Think of a dish with oysters.”

The wine reveals subtle, well-integrated oak on the palate, along with exquisite elegance and great length with refined tannin. The black fruit flavors are remarkably fresh.

Despite its full-body profile, the 2015 Familia Torres Altos Ibericos Reserva is a welcomed summer red wine to burger night - or anything off the grill. A perennial 90+ pointer for about $20, this Tempranillo is our go-to for dinner parties or quiet nights at home. Very opaque, garnet red color leads to intense aromas of fresh forest berries with seductive notes reminiscent of dried figs, and toasted nuances like roasted mocha coffee. Vibrant and flavorful on the palate, well-structured and remarkably persistent all the way through to an excellent finish.

An ideal partner for an al fresco pizza night, the 2019 Val di Suga Rosso di Montalcino is a smooth, rounded Sangiovese that drinks effortlessly while providing the varietal characteristics that make Montalcino a world-class wine region. In the glass, the bright ruby red color of local Sangiovese wines is visible. With a lively nose, it expresses the freshness of red berry fruit such as cherry and black currant, followed by sweet and spicy nuances. A stunning Napa Cab from lauded winemaker Thomas River Brown, the 2017 Hestan Vineyards Meyer Vineyard Cabernet Sauvignon is our top pick for any celebration. In the glass the wine displays a nearly opaque purple-ruby hue. Aromas suggest tart red fruit, clove, vanilla husk and an exotic spice component. Palate notes are decidedly bramble-focused, with lingering aromatic wood and purple flowers. The tannins are firm but even and provide a nice black tea component, both in mouth feel and flavor. The finish is very light and clean, thanks to a refreshing acid framework. This wine will show best after a few hours in the decanter or 3-5 years in the cellar.

Lieu Dit is a partnership between longtime friends Eric Railsback and Justin Willett. After countless bottles shared together and many trips to France, Railsback and Willett decided to found Lieu Dit in 2011 and focus solely on the varieties indigenous to the Loire Valley - now grown in Santa Barbara County. The varied micro-climates and marine based soils of Santa Barbara County are ideally suited to this set of grapes. Lieu Dit centers on Sauvignon Blanc and more limited bottlings of Chenin Blanc, Cabernet Franc and Rosé producing 2500 cases annually. Each vintage is a quest for purity, elegance, and balance in every wine, with their 2020 Cabernet Franc as an excellent example of their philosophical approach. It’s fruit-driven for a Cab Franc, with soft flint and a touch of spice adding to a layered attack. Low tannic structure and very rounded shoulders makes this bottle very approachable now and quite enjoyable.

Smooth. Rich. Delicious. What a fantastic Napa Cab from the Behrens Family boutique winery - a small, family owned winery that produces small lots of six or seven wines a year. Hard to find, their collection attracts cult wine followers and avid Napa fans alike. Each of their wines are produced as a labor of love, hand punched with minimal intervention and filtration, and crafted through an artesian’s approach. The 2017 Spare Me Cabernet Sauvignon delivers layers of deep, dark fruit and bacon fat that lead to the ripe, polished palate infused with blackberry, plum, and cocoa. The cherry and baking spice finish lingers long, really completing the wine. With 5 years of bottle age, the wine is ready to pair with anything off the grill - or has got the structure to cellar for another 5-10 years. Phenomenal.
