What’s your gameplan today?

Here’s ours: some sparkles to warm up, while we’re saying hi to friends and noshing on dips and spicy wings. Then, a couple of light reds—a Gamay for burgers, and a Pais for nachos—followed by a versatile, savory mezcal to either celebrate our win, or drown our sorrows for the loss.

For the January edition of A Case Study, Slopey’s monthly wine club, we played with the idea of ‘Dry January’: dry wines made from grapes usually associated with sweet wines.

‘Sweet’ and ‘Dry’ may be the most commonly used wine adjectives out there, but also the most misunderstood. Our Study delved into the many other factors that go into how our palates register ‘dryness’—acidity, tannins, carbonation, alcohol content, the age of the wine, and even the temperature at which is served—and come together in a chorus.

If you think all Rieslings are sweet, or that Tokaj are just exquisite dessert wines, or that Port is great for Christmas, think again. Those grapes, though they make beautiful sweet wines, actually have a huge range when vinified dry.

The Hölzchen Kabinett trocken AP-21 included in the Case Study is an exclusive due to very limited quantities, but there’s still time to snag a few bottles and get our insights onto how to make Dry January more fun.

The summer’s muggy heat, blazing sun and afternoon showers become totally bearable with crisp, taut white—served very cold.

Yvonne Hegoburu's of life is proof that it is never too late to follow our dreams. She passed away this year at the age of 95, but only after having taken on winemaking for the first time at the age of 60. She was inspired by her late husband René, with whom she purchased 16 hectares of land in the Jurançon region in southwest France. Yvonne would recall how they would excitedly discuss their winemaking dreams, and when he unexpectedly passed away in 1987, Yvonne decided to make the jump, in his honor. She has said “I planted vines when my husband died. Ever since then, all this love inside me, I give it to the vines. I talk to them. I have an exchange with them. I ask them to drive their roots deep down into the soil to get the best from the land.” Yvonne worked the vines tirelessly until she retired in 2014, and today her son Jean-René continues to farm under the tenets of biodynamics and to make wine in the style of his mother. The vineyards are mostly dedicated to Petit Manseng and Gros Manseng, two of southwest France’s most well-known varieties, and this Cuvée Monplaisir is a blend of the two grapes.

Get ready for some zippy acidity! The wine is thirst-quenchingly refreshing, with the zest and piths of limes and green lemons. Thyme and under-ripe peaches fill the middle and a salty backbone of minerality comes through to all past the finish. Shellfish and crustaceans, sand and sunshine will be great pairings with this one!

We’re having a renewed love for Campania lately—and this Greco di Tufo shows exactly why. Campania is a place defined by change. The first vines in the area were planted by Greeks, changed hands between warring tribes, and briefly belonged to Spain. Its topography tells a story of that change, whether gradual or violent. Mount Vesuvius casts a long shadow over Naples and the surrounding area, and its power can be felt in the wines with a beautiful throughline of a dark minerality that tinges the wine with smoke and salt, rocks and earth.

While Angelo Muto comes from a family of winemakers, he is the first to estate-bottle. His five hectares of Greco vineyards sit around the small village of Tufo, center of the Greco di Tufo appellation—the smallest of Campania’s four DOCGs—tucked into a picturesque landscape of rolling hills inland of bustling Naples. Greco, an ancient varietal that found its way to southern Italy from Greece long ago, expresses its full structural and aromatic potential in the volcanic soils that give Tufo its name. Angelo’s flagship parcel is in fact situated directly atop an abandoned sulfur mine, on a very steep slope at high altitude. The vineyards are worked entirely by hand, as much a result of the significant incline as it is Angelo’s determination to bring out the best in his land. He refuses to treat his vines with herbicides or pesticides, proudly pointing out the abundant grasses, wildflowers, and butterflies prospering amid the rows of Greco.

The wine results in a beauty of a beast. At opening, the nose is intensely mineral: you can literally smell the volcano, by way of a mineral spring and the ocean at low-tide. The fruit is like a whole pomelo—the oils in the skins, its juicy pulp, and the bitterness in the piths—with a salty, fleshy body and wonderful salty acidity all the way throughout to the finish.

This wine will sing along with food, especially fish, and especially the more pungent ones like anchovies, sardines, mackerel, bluefish. Get a grill going today and drink the volcano!

It’s Passover & Easter just around the corner, and we bet there will be lamb dishes on plenty of your tables to celebrate! Lamb and Syrah are as classic a pairing as springtime & cherry blossoms, salt & pepper and thunder & lightning.

Syrah originates in the Rhône valley in France, but it is widely planted all over the world—also called Shiraz in Australia. They have thick, tough skins that yield some of the darkest wines out there, with a deep purple color, and a rich and powerful character.

Madson Wines is the collaboration of winemaker Cole Thomas and viticulturalists Ken Sweles and Abbey Crystal. Founded in 2018, Madson champions a small quantity/high quality ethos made from organically farmed grapes in the Santa Cruz Mountains and Santa Rita Hills of central California. Cole comes from a serious agricultural background, beginning with organic vegetable farming and seed saving before he found his way into the winemaking world after working in Australia and New Zealand. Meanwhile, Ken and Abbey have extensive experience as vineyard managers and growers, and have been part of the Santa Cruz winemaking community for many years.

Madson is sort of an unsung hero in natural wine:
First, the fruit comes exclusively from vineyards that are farmed organically and practice regenerative viticulture. Second, their winemaking is whole-heartedly non-interventionist, relying on native yeasts for fermentation, aging in neutral oaks, and bottling without fining or filtration, with minimal sulfur. Lastly, and very impressively: they operate as a 100% carbon-neutral winery!

This 2021 Syrah comes from a 22 acre plot in the Sta. Rita Hills. It's conjures up Northern Rhône vibes, with olive tapenade and sage brush on the nose. The palate goes into cooked plums and fig. Evocative layers emerge: eucalyptus, charred fruit, salt, gamey meat with a silky almost satiny texture.

It’s been a relatively mild winter here in NYC, and so we’re craving a red that *could* play a degree bigger if the weather gods finally send us some snow.

In the gentle rolling hills of Rueda, a 30min drive southwest of Valladolid, is the estate of Manuel Cantalapiedra, a property of about 20 hectares of vineyards, spread over several plots in the municipality of La Seca - in the heart of the Rueda appellation. Manuel learned the trade through his father Isaac, who imparted a deep respect for the land and the prioritizing of quality over gaining any appellation approval. The Cantalapiedra’s are blessed with some parcels of old vines on their property, which they have painstakingly cared for with certified organic practices and without any irrigation whatsoever. Their winemaking is firmly in the non-interventionist camp, using only native yeasts for their fermentation, minimal amounts of sulfur, without any additional manipulation.

"Arenisca" is a new cuvee from 100% Tinta de Toro grapes, a local strand of Tempranillo. It was harvested from the Paraje Los Panaderos vineyard in the neighboring village of Benialbo, one of the highest elevation sites in the appellation of Toro. Typically, the wines of Toro tend to be very extracted, tannic and rich, and while Arenisca certainly has the typical fruit character of Tinta de Toro, it really stands out from the pack for its vibrant acidity and balance. Notes of roasted strawberries and lush cherries come together with a charred beefy umami and fresh concrete in the palate with sandpaper tannins and dusty minerals in the finish. Rustic and ripe in perfect chorus. You can enjoy this with a roasted chicken and it will be great with all those schmaltzy bits, or with a grilled, charred ribeye and some bitter greens.

Alternately—and here's hoping we get some snow soon—sipping on this while the weather storms outside will be like being wrapped in a wooly blanket.
