TONIGHT 6-8: Strangely Beautiful Wines from NZ’s
“My region tastes like kelp and the sea and shellfish. A lot of people try to remove these notes, but I want to lengthen and deepen them.”
Theo Cole’s goal has been to be part of a change in New Zealand, starting for him with his small zone of the Canterbury region on the South Island, where he’s been making wine to no small acclaim since 2012. Theo relies on organic viticulture, specifically working with biodiverse, no-till vineyards, full of everything that can grow.
It’s also worth mentioning that Theo sometimes uses a relatively new fermentation technique called “flotation”, which is essentially carbonic maceration but with whole bunches of one variety literally floating (submerged) in the direct-pressed juice of another variety, or two. Pretty interesting, and yes, you can taste it.
The whole thing is pretty cool, and the wines do not invite ready comparisons. Gotta come taste them!
