Hot Apple Cider Mulled with RumChata

Ingredients
½ gallon fresh apple cider 64 ounces
1 teaspoon ground nutmeg
½ teaspoon whole cloves
4 orange slices
4 Cinnamon sticks
1 ½ cups Rum RumChata
Garnish
1 tablespoon honey
¼ cup brown sugar
Cinnamon sticks

Instructions
Pour apple cider in a saucepan (or slow cooker) and set on medium-high heat.
Add the nutmeg and cloves, stir well.
Add orange slices and cinnamon sticks then heat the apple cider until it is hot.
Simmer on warm until ready to serve.
Prepare mugs by adding honey to a plate and dip rims of mugs into the honey. Dip into a plate of brown sugar to coat the rims with sugar.
Before serving, strain cider mixture to remove orange slices, cloves and cinnamon sticks. Pour cider into mugs. Add a shot of RumChata to each glass.
Garnish with cinnamon sticks and serve hot.

Thyme for Blood Orange Cocktail

Ingredients
1.5 oz St. Germain Elderflower liqueur
1.5 oz Gin or Vodka
splash fresh lime juice
splash blood orange juice
ginger beer
garnish thyme sprigs and blood orange slices

Instructions
Fill a cocktail glass with ice.
Add St. Germain and choice of Gin or Vodka.
Add splash of lime juice and splash of blood orange juice.
Top off with ginger beer and stir it all up.
Serve with a blood orange slice and fresh thyme as a garnish!

Pumpkin Pie Martini

Ingredients
2 tablespoon pumpkin pie puree
¾ oz vanilla or whipped cream vodka
1 oz RumChata cream liqueur
¼ teaspoon pumpkin pie spice
½ oz Maple syrup
Rim
Caramel Sauce
Graham Cracker Crumbs

Instructions
Add caramel and graham cracker crumbs onto plates. Dip rim of martini glass in caramel sauce and then into the graham cracker crumbs.
Chill glass in freezer for 10-20 minutes.
Add all ingredients to a shaker with ice and shake vigorously for 10-20 seconds.
Pour into 4 oz. martini glass and serve!
Garnish Options: Cinnamon, pumpkin pie spice, cinnamon stick, and/or a dollop of freshly whipped cream.

Caramel Apple Cider Mimosas

Ingredients
Caramel sauce and Cinnamon sugar for rim
4 ounces apple cider chilled
2-4 ounces prosecco or champagne chilled
cinnamon stick for garnish
apple slice for garnish

Instructions
Dip the rim of the champagne flute in caramel and then in the cinnamon sugar. I find it easiest to use a small plate to hold the caramel and cinnamon sugar separate for easy dipping.
Pour in the apple cider and top off with the prosecco.
Garnish with an apple slice or cinnamon stick if desired.

Cranberry Gin Fizz Cocktail

Ingredients
¾ cup sugar
¾ cup water
1 cup fresh cranberries
1 lemon cut into wedges
½ orange cut into slices
1 ½ cups gin
1 cup ginger beer or ginger ale
Garnish
Candied Cranberries
4 mint sprigs

Instructions
Bring sugar and water to a boil in a medium saucepan, stir until sugar is dissolved. Remove from heat; measure one cup of syrup, reserve and refrigerate any extra for another use.
Heat the syrup to a boil and then reduce heat to medium. Add the cranberries and simmer for 2-3 minutes until they just begin to burst. Remove from heat and let cool completely in the cranberry syrup.
Reserve 3 of the candied cranberries per cocktail for garnish and set aside.
Place 2 Tablespoons drained cranberries and 6 Tablespoons cranberry syrup in a large pitcher; add the lemon wedges and orange slices.
Using a muddler or wooden spoon, vigorously mash the fruit.
Stir in gin and let steep for at least 5 minutes.
Strain into a medium pitcher.
Fill 4 glasses with crushed ice and 1/4 cup ginger beer or ginger ale.
Fill a cocktail shaker with ice and then pour half the cranberry mixture into the shaker and shake vigorously for 10 seconds, strain liquid into two glasses. Repeat.
Garnish with the candied cranberries and a mint sprig
