Trappistes Rochefort 6

A new Trappistes has entered the shop! Out of the eleven abbey's that produce the Trappistes beers this one is produced by Our Lady of Saint-Remy Abbey in Rochefort.

"Rochefort Trappist 6 is named after its original gravity measured in “Belgian degrees” – a brewing scale no longer used today. It was first sold to the public in 1953. Reddish-brown color with amber-gold highlights; soft body leads to earthy flavors and an herbal character. Refined, soft spiciness in the bouquet finishes with a bit of caramel. Bottle-conditioned for soft natural carbonation."

We have new wine glasses in the shop!

"Slightly conical, gently curved bowl - was inspired by the form of an unfurling rose. The shape, size, and proportions of the bowl act as an extension of the nose itself bringing the olfactory sense in close contact to the wine. The size of the aperture, the distance to the widest part of the glass, and the concave sides were all researched and developed to create a synergy that yields unbelievable wine enjoyment"

Come taste it this week on the tasting table

Hay There with Truffles is a creamy, smooth unpasteurized milk Gouda with a generous sprinkling of delicate black Italian summer truffles. Hay There with Truffles crafted from the milk of Holstein-Fresian cows, the breed developed for its dairying prowess in Holland. Hay there with Truffles is made on the Bouter single herd family farm for 4 generations. Each wax-coated wheel is aged for over 60 days, during which time it develops a dense, rm paste and a sweet, grassy and milky avor. As a rule, the flavor of truffles is enhanced by rich complements, which is why truffles are so perfect for mixing into butter, cream sauces, and of course cheese.

Let's change gears and talk beer!

In 2012 St. Bernardus launched a one-off brew on the occasion of the opening of the first St.Bernardus-themed café in Tokoyo. Eight years later, you can sample our St.Bernardus Tokyo again, albeit with a new recipe! The Belgian illustrator Jonas Devacht created the artwork for the can, which consists of an impression of Japanese nightlife in the iconic streets of Kanda district, where you can find ‘Brasserie St.Bernardus’.

Tokyo is an unfiltered, golden ale, which has been brewed with a large amount of wheat, somewhere between a wit beer and a saison. It's famed for its hints of citrus, combined with floral aromas of chamomile and fruity yeast aromas of banana and red apple. 6.0% abv.

Now that the mass market kids’ chocolate is out of your house (you did give it all away on Halloween right?), it’s time to dip into the grown-up stuff. And no one is doing better (and very) grown-up chocolate these days than Christina Kim of Secret Garden Chocolate and Korita Chocolate. Come sample her wildly creative and delicious work and learn how she creates it from bean to bar on Thursday, November 7. Just reserve your spots at one of four 30-minute sessions and get ready to be wowed and charmed.

From her chocolatier start (making a homemade Ferrero Rocher for her sister's birthday in 2017), Christina has moved through visiting chocolate growers in Peru and exploring the intersection of chocolate, herbs and health through her first company, Secret Garden Chocolate. A chance farmers’ market meeting with her now husband, Italian wine expert Attilio Laroza, led to the creation of Korita Chocolate to bring her work to a wider audience. Like you!

One suspects that Pierre-Etienne Mellot wasn’t thinking of founding a winegrowing legend when he planted his first vines west of Paris on the limestone slopes of Sancerre. But since 1513, the Mellot family have been in the forefront of Sancerre’s ups and downs and (now) ups again. You won’t want to miss the chance to meet the latest generation in this 500+ year story when Adrien Mellot visits the shop to share his family’s wines.

The Mellot family helped bring Sancerre to attention of 20th Century wine lovers when Alphonse Mellot began exhibiting his wines in Paris in the 1920s. His sons, Joseph and Edmond, took over in 1949 before deciding to divide Dom Alphonse Mellot between them. Edmond got the Alphonse Mellot name and some vines. Joseph got the rest of the vines and their father’s historic winery, which he renamed Dom Joseph Mellot.
