I was in TEST KITCHEN mode this morning 👨🏽‍🍳 after hearing from one of my cooks about a dish that her family used to make at home.

This is a chorizo, bean and cheese chimichanga rolled in a "BUENO" brand 10" pressed tortilla.

I'm all about texture when trying new recipes and the combination of a thin pressed tortilla with the super hot frying oil makes for a light and crispy crunch.

It reminds me of a delicate fried pie. The crust is crispy on the edge and buttery inside. 😋

The fresh cooked fillings with no added preservatives and never frozen ingredients make this a step above the flash frozen boxed chimichanga we sell and get everywhere else.

This tastes amazing and the textures from smooth and creamy to crisp and crunchy are an awesome pair. Add in the spiciness of the chorizo and rich, creamy, earthiness of the beans and cheese and I can see why our cook remembers this so fondly. ❤️

This is how it happens folks. We talk. We remember. We test and we improvise.

Everyone in this picture of our little family has, at one time or another, put in several shifts at Pronto Mart. Many of our family isn't in this picture but have contributed over all these years.

We are still a small family owned business now in our 4th generation.

Our cooks, cashiers, stockers and rollers have become our family as well and we couldn't do any of this without them!

We are so very blessed to have some of the most loyal and loving customers. Many of you have become our friends and some have even become family.

Thanks for all of your support and we hope to see you soon.

We open at 6:00 AM tomorrow.
