Over the last few years I have really developed a fondness for Champagne and a big part of the reason is Waris. Their wines opened my eyes to the joy that premium, small production, grower Champagne can bring. Their classic l’Heritage Brut is a brilliant aperitif that deftly balances the fantastic minerality and acidity that we love about great Champagne with a generous compliment of green apple, lemon verbena, quince, and peach. Everything is neatly tied together with a little kiss of French vanilla, making this sparkler feel like it is the event.
