This beauty is on my way home from work. One only needs look at the ever-eroding gorge walls of shale to understand what lies beneath our vineyards. The water pouring over this waterfall comes from creeks and land up to 10 miles west and once it flows over, it continues 3/4 mile to Cayuga Lake where it swirls around for 10-12 years before heading north to waterways that eventually take it out to the Atlantic Ocean. This is how you put a new French oak barrel together at Taransaud from scratch. Wood comes from 80-200 year old trees and is seasoned for 24-30 months, then cut very specifically and stacked in perfect "kits" of boards. A kit holds exactly what is needed to build a barrel plus a couple extra staves just in case.

Heard lots and lots of hammering today at the cooperage Taransaud as temporary metal hoops were fitted on barrels, taken off after the toasting process and finally shiny, new hoops were hammered on, adjusted in various processes and repositioned on the smoothly-sanded barrel.
