“Intense aromas of grilled nuts, pistachio, and a hint of white chocolate. Ripe honeydew notes finish crisp with a hint of lingering sweetness.
This savory sake is inspired by local legends of Niigata's annual fox-bride festival. Local lore tells of mysterious lights that appeared on nearby Mt. Kirin in the distant past, which are claimed to be the lanterns carried in the fox-bride procession” (KOME Collective).
Kanbara Bride of the Fox goes great with meat dishes, perfect for a thanksgiving with friends & family!

Let’s kick it off with a look into each of their sake!
1. Aizu Shikon [Crane Castle]🏯
For the first time in Hawaii, Aizu Shikon is here to show that Tokubetsu Junmai can be smooth and have great character in terms of fruitiness and a savory finish.
“With its finely-etched junmai flavor, Aizu Shikon goes well with nabe hotpots and grilled fish. Also drinks nicely with maguro, bonito and mackerel. Serve cold” (WSI).
2. Nagurayama Gekkyu [Crescent Moon]🌙
Junmai
ABV: 15%
Polishing Ratio: 55%
Rice: Yume no Kaori
“Very good with sunomono—crab, octopus or seaweed salads dressed with vinegar and dashi. Recommended with oden, nabe (hotpot) and unagi” (WSI).
3. Nagurayama Yokikana [Master’s Touch]✨
Junmai Ginjo*
ABV: 16%
Polishing Ratio: 50%
Rice: Yamadanishiki
A daiginjo in all but name, Yokikana pairs well with scallops, sea bream and abalone as well as seasonable vegetables and salads. Serve cool but not cold” (WSI).
4. Nagurayama Nigori Ginjo [Snow White❄️]
Junmai Ginjo
ABV: 16%
Polishing Ratio: 55%
Rice: Yume no Kaori
Brewery Location: Fukushima Prefecture
“Drink cold. Perfect with tofu dishes. Goes well with Near Eastern mezze and Indian dal and curries. Enhances vegan cuisine.” (WSI).

Made with local Hokkaido rice, Ginpu, this namazake has a beautiful apple aroma and a nice balance between sweet & dry rice-notes.
Smooth with a long finish, it’s best served chilled with white fish sashimi, oysters, and scallops to Japanese dishes like tempura, karaage, and more.
