It’s finally back in stock! An elegant, light, and sweet sake that made itself a customer favorite!

With a gentle melon like aroma & a clean finish, “This vibrant showstopper is beautifully soft and feminine, brewed by one of Japan’s only female brewery owners and tojis [Master Brewer].

Brewed in Hiroshima, the birthplace of Ginjo sake, which is known for remarkably soft water that requires expert skill to use in sake production.

A natural match for sweet, succulent shellfish like lobster and scallops, but surprising pairings like bittersweet chocolate work, too” (Kome Collective).

Rihei Ginger Shochu

🫚Ginger? In a shochu? You heard right, this single-distilled shochu is made from local ginger in Miyazaki prefecture!

But who would think to even combine ginger and shochu together?🤔

Of course, it’s the Ochiai Distillery—experts with making sweet potato shochu, though they also like to have fun and use other local ingredients like pumpkin, bell pepper, mugwort, and even yomogi leaves!

“This 4th generation, family-run distillery honors the traditions of their 100-year-old past while continuing to evolve as an award-winning shochu producer in the 21st century.

With 38% alcohol genshu, this Japanese craft spirit contains 20% ginger, 30% rice, and 50% barley.”🌾

All together, it creates a “Refreshing ginger notes on the palate with a tinge of spice and citrus that comes from the koji rice and barley” (Kome Collective).

So why not try this with some sushi on the side, just like you would with gari!🍣😋

A new sake to our shop that some of you on our email blast list may have heard of already😉

From Fukuoka Prefecture, “The two dominant words used at the brewery to describe the sake of Niwa No Uguisu are juicy and fresh.

This creamy and juicy Junmai Daiginjo sake is round, balanced and fruity with a very clean finish” (MTC Sake).

It’s perfect for gifting and you can do all kind of food pairings with Niwa, but especially sweet and savory dishes like plums & chicken!

Also, if you’re wondering how this sake got its name, then just take a look at its Japanese nightingales (Uguisu)!

These birds would come from the nearby shrine to play in the brewer’s garden’s pond, so they decided to honor both the bird and deity of the shrine.

Lets start off the week with a classic sweet sake treat!

This Junmai grade sake has a soft gentle sweetness like mochi, and the brewery behind it has won the most amount of gold awards from Japan’s National Sake Appraisal in Fukushima Prefecture!

“A gently aromatic, billowing junmai, nicely balanced and easy to drink. Light-bodied with a wisp of sweetness, lovely either cool or warmed.

Very good with sunomono—crab, octopus or seaweed salads dressed with vinegar and dashi. Recommended with oden, nabe (hotpot) and unagi” (WSI).

We'll be tasting through 3 sake today: Dassai Blue 50, Dassai Blue 35, & Dassai Blue 23!

Dassai USA President Kenzo Shimotori & Sales Manager Masayo Kobayashi will be here from 1PM - 4PM to pour and talk about all about their sake.

It’s a can’t miss event for sake lovers to ‘celebrate the world’s finest sake,’ with almost 600 sake to taste from!

As well as 18 top restaurants will be participating by cooking up some ono foods to pair with the sake all in 1 night!

This special sake is smoother than most Junmai as it’s polished to a Ginjo grade, and is a perfect balance between dry and sweet.

It “…has honeysuckle; melon, pineapple and sugar aroma, with a rounded flavor and soft mouth-feel balanced by acidity. This well-balanced sake expands in the palate to unveil the sweet umami.”

Besides Japanese cuisine, from tempura to sashimi, they even say you can pair it with pizza! Or why not try it with some charcuterie?

We’ve moved to Kaka’ako

It took us 1 year, but we are finally OPEN! Our new home is decorated by amazing murals that you see pictured above, from the recent Pow Wow Hawaii event held here in Kaka’ako. You can find us on the corner of Cooke St. and Halekauwila St., between Hawaii Blueprint and Designer Body.

We thank you very much for your patience and appreciate your continued support! Please stop by for a visit the next time your in our new neighborhood. There’s a lot happening with Salt, Down to Earth and Whole Foods that recently opened near by. We’ve missed you and look forward to seeing everyone again!
