This Honjozo-grade sake is even great chilled❄️, room temperature, or warmed up ♨️

A smooth mouthfeel with a slight floral nose, light touch of umami, and then a very clean & dry finish!

Pair it with anything savory or with meat like a rich broth, grilled fish, sushi, sukiyaki, & more 🍲🧆 🍣

This is a sake made exclusively for Japan Prestige Sake Association! 🇯🇵

Soft and elegant, it has a “Fruity aroma of delicious apple, peach and mango. Expansive refreshing flavor of juicy fruit with mild umami. Soft and viscous texture”. 🍎🍑🥭

It has a beautiful label with a unique “cast gold” texture inspired by Yamagata’s famous Metal Casting!

And it’s conveniently wrapped in a red bag, good against the sun and perfect for gifting! 🎁

Enjoy chilled on its own or pair with sashimi, baked fish, shellfish, fruits, etc.

Let’s pick back up with a sake that we last tasted before the end of 2024:

Shizuku Style💧

What is Shizuku?

Shizuku or Gravity Drip is where the rice mash is hung in a cloth bag that allows the sake to slowly drip out due to gravity.

This takes a much longer time than traditional or more modern methods of pressing sake, but it results in an incredibly smoother style of sake.

And with Premium Stella it’s like drinking super soft water!😋

Brewed by Inaba Shuzo, this family sake brewery has been around since the Edo Period, and is now run by one of the few female Toji (Brewmaster) around—Nobuko Inaba!

“This sake has a vivid fruity aroma, and as the temperature rises, the mellow umami drawn out from the rice’s core can be enjoyed.

Has a little sweetness at the front, but because of the quick, clean finish this sake can pair beautifully with Western cuisine.

Singaporean cuisine, Spanish cuisine, oysters on the half-shell, steamers with garlic butter sauce, crawfish, venison, duck” (MTC).

Just a reminder, we’re open tomorrow for New Year’s Eve from 10AM - 5PM! 📣

We’ve heard about our Hakkaisan sake that’s coming up, but let’s not forget our other sake of the week too🤙🏼🍶

So to kick it off why not start with an aged sake that’s new to Hawaii? But Shirakabegura isn’t quite snow age like Hakkaisan—it’s aged in earthenware-pots!🪴

After being brewed in the traditional Yamahai method, this sake is aged for 6 years in its pot within an ice vault before being bottled & then aged until 10 years total!🧊

This is said to “…bring out more soft and full quality of Yamadanishiki rice. The nuanced notes of elegant and complex taste with mineral quality”

The nuanced notes includes salted Asian pears, orange, and banana. The palate has a creany mouthfeel and taste of melon, vanila, and cream. The finish has long savory flavors including minerals reflecting the pot-aging process.

Try this sake cold or warm❄️♨️ It becomes much more savory as it heats up and even at room temp!

Pair it with pork loin, steamed clams, risotto, any seafood, and more😋

We’ve covered so many ono Nanbu Bijin sake, but let’s throw one more in!

It’s made with local Yuinoka rice milled down to 45%, lending the sake a delicate floral aroma and an exceptionally clean taste. Dry, juicy and full of umami!

Perfect to pair it with an omakase night!

🔔Tis the season for our last BIG sake tasting of the year! That’s right, we’ll be doing a Hakkaisan Sake Tasting at The Sake Shop this Saturday (12/14) from 4PM - 7PM🍶

So to send off 2024, we’ll be tasting a total of 5 Hakkaisan Sake with all of 5 on sale! 🎊

Including two of your favorite snow-aged sake—wait, snow-aged? Yes☃️🍶!

By letting their sake chill in their famous Yukimuro/Snow Room, which is filled with tons & tons of snow year-round, Hakkaisan creates some lush, mellow, and super smooth sake. You’ll have to try both the 3-Year & 8-Year snow-aged sake for yourself!

And to top it all off, we’ll even been carrying a LIMITED & EXTREMELY HIGH-END sake from Hakkaisan:

This sake, as seen on the second slide with image provided by Hakkaisan, is Hakkaisan’s 100-Year Anniversary sake “Hyaku Daiginjo” with only 3 available at The Sake Shop!

It’s incredibly limited and the price shows with it being $1k+‼️

While we sadly won’t be able to taste this one specific sake, we will be joined by a special guest—Takuro Furujiku—from Hakkaisan Sake Brewery to explain all about the sake we will be tasting as well as the Hyaku Daiginjo🍶💯

Nanbu Bijin Tokubetsu Junmai

Our last sake to round up our Aloha Friday Tasting this week is none other than Nanbu Bijin’s famed Champion Sake of 2017 from the International Wine Challenge!

Highly aromatic, with fruit and grain notes. Neat, clean, and crafted to pair with a wide range of food, excellent at any temperature.

Their recent batch has stronger notes sweet & fruity when you first take a sip! But it still finishes clean and crisp (which makes it hard to stop drinking😚🍶)

So pair it with a variety of cuisines, from an Izakaya night of bbq & pupu—including even cheese—to seafood galore!

It’s also made with local Ginotome rice and local water from Ninohe City, Iwate Prefecture, to truly make it “Made in Ninohe.” Their sake have even been Kosher certified!

Kome/Rice Shochu

A new but classic shochu has arrived to our shop from one of our favorite shochu brands—Sengetsu or Cresent Moon!

From Kumamoto Prefecture, Taru Sengetsu is a mature style of shochu as it was “aged in oak barrels for over 6 years, resulting in whisky-like flavor and light amber color. Like whisky, it has subtle banana and vanilla aromas”

It’s a shochu you’ll definitely want to try on the rocks or even with some club soda✨

You can even give it as a gift with two Sengetsu shochu cups packed and ready!(Swipe to next picture for gift set🎁)

Founded over a 110+ years, Sengetsu is known for their Kuma Shochu, which can only be made in Hitoyoshi Kuma.

“We use only carefully selected, high-quality rice and river-bed water from the pure Kuma River, born of the unspoiled nature of Hitoyoshi, to create our shochus.

Sengetsu Shochu is especially popular amongst the locals of Hitoyoshi, the home of Kuma Shochu.” (Sengetsu Shuzo).

We’ve moved to Kaka’ako

It took us 1 year, but we are finally OPEN! Our new home is decorated by amazing murals that you see pictured above, from the recent Pow Wow Hawaii event held here in Kaka’ako. You can find us on the corner of Cooke St. and Halekauwila St., between Hawaii Blueprint and Designer Body.

We thank you very much for your patience and appreciate your continued support! Please stop by for a visit the next time your in our new neighborhood.
