“This is a dream come true collaboration. Sierra Nevada Brewery reached out to do a double collab, one at our place and one at their place. We decided to do what we do best at each other's collab, a stout in Chico and a whole leaf IPA in Rocklin. Walking with Giants is a West Coast IPA brewed with a 5.5 lb per bbl combo of 100% whole leaf Cascade, Strata, and Citra hops. This unusual and more challenging approach gives you an aromatic experience similar to walking through a hop yard during the yearly harvest. The flavor is quite different too, which lends more hop "stickiness" that lingers longer than traditional pelletized varieties.”

Normally we prefer to use hop combinations in our IPAs but with the ability to buy hops that exactly fit our flavor needs we figured we should start making single hops beers with our selected varieties. Citra Showcase is a Hazy Double IPA using 6.6 lbs per bbl of hand selected Citra hops from the Yakima Chief Hop Group. Orange zest and pineapple are dominant flavors in this beer with a small touch of peach rings and dank in the background.”

Needless to say we listened to what it told us and threw this in an American Pilsner. Earthy notes of citrus and spice meld well with the heirloom pilsner malt. Also the name reminds us of our three essential daily necessities.”

“One of our Brewer friends dropped this hint that there was a new experimental hop that could be the "next big thing." We told him we are already contracted for Strata but he said, "No it's not Strata you bloody fool, it's an experimental variety called HBC 586." Our ears perked up and he had our undivided attention. After hearing descriptors such as "tropical" and "bright citrus" we knew we had to test it out. Welcome young One is a 6.6 hop combo showcase of HBC 586 with a hint of Citra. Strong tropical notes pineapple, lychee, mango, guava, and honeydew It's safe to say we are definitely using this hop in the near future.“

To take this beer over the top, we are used ThiolBoost from Berkeley Yeast which added an additional layer of tropical fruits emphasizing notes of passion fruit, guava, and grapefruit zest to the gooseberry, sauvignon blanc, and tangerine flavors of the hops. ThiolBoost is still in the trial stages and is normally not available to all breweries, we were just fortunate to be able to use it for public release.“

Freestyle has recently made waves in the brewing community for reviving Nelson Sauvin back to what it was when we all fell in love with the hop. Through Brewer feedback and selective breeding, they were able to reduce the dank and musty aromas this varietal was experiencing and increase the guava, sauvignon blanc, and gooseberry flavors that were originally being expressed pre 2015. We highly recommend you give this a try to appreciate the work Freestyle and other progressive hop farmers are doing to improve the liquid in your glass.“

“Animal rescue is important to us at Moksa. It's even more special when one the Moksa family members adopts a dog of their own. Baby Bart is a Hazy IPA dedicated to Bartholomew JoJo Simpson aka Bart the Dog , who was recently adopted by our Graphic Designer Conor Hunter after he was raised in foster care by our Head Brewer's wife, Steph . Bart is the sole survivor of his litter and had a rough start to his young life, but was nursed to health and is expected to live a normal pitbull life.
Baby Bart, the beer, is blasted with a 6.6 hop combo of Nelson and Citra. The resulting flavors consist of juicy pineapple, pear, white wine, and guava.”

Let's Lager starts as a traditional German Pilsner then gets "Americanized" with an IPA level dry hop of 3.3 lbs per bbl of hops. For this second iteration of this beer we decided to go with a 2:1 ratio of Strata:NZ Cascade. This beer is crisp with a high carbonation and familiar lager esters from the yeast. The fruit forward hops add layers of pineapple, pine, and Gewürztraminer white wine.“

“This beer is dedicated to all the Angry Grandpa's out there fed up with how things just "aren't the way they used to be." Just like angry grandpas, this beer is a little more bitter than the rest. But with a 6.6 lb per bbl hop combo of hand selected Citra and Simcoe, this beer does not lack anything in the flavor department. Heavy notes of citrus and pine dominate the flavor profile. And although a tad bit hazy in appearance, this double IPA screams West Coast due to its traditional assertive hop bitterness and low residual sugar content.”
