National Maple Syrup day is Dec 17 and with deer hunting kicking off, thought this be a great receip to share,,
Maple Syrup Deer Jerky Recipe 🍁🦌
Ingredients:
2 lbs venison (lean cuts, such as tenderloin or top round)
1/2 cup pure maple syrup 🍁
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
2 teaspoons liquid smoke (optional)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional for heat)
1 teaspoon kosher salt
Instructions:
1️⃣ Slice the venison:
Freeze the venison for about 1 hour to make slicing easier. Cut the meat into 1/4-inch thick strips against the grain for tenderness.
2️⃣ Prepare the marinade:
In a large bowl, combine the maple syrup, soy sauce, Worcestershire sauce, apple cider vinegar, liquid smoke, garlic powder, onion powder, black pepper, cayenne pepper, and salt.
3️⃣ Marinate the meat:
Place the venison strips into the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 8 hours or overnight, stirring occasionally.
4️⃣ Preheat the dehydrator or oven:
Dehydrator: Set to 160°F (71°C).
Oven: Preheat to 175°F (80°C). Line baking sheets with aluminum foil and place wire racks on top.
5️⃣ Dry the jerky:
Remove the venison strips from the marinade, pat them dry with paper towels, and arrange them in a single layer on the dehydrator trays or wire racks.
Dehydrator: Dry for 4-6 hours, checking for desired texture.
Oven: Bake for 4-5 hours, propping the oven door slightly open with a wooden spoon to allow moisture to escape.
6️⃣ Check for doneness:
The jerky should be firm but slightly pliable and dry to the touch. It should not be brittle.
7️⃣ Cool and store:
Allow the jerky to cool completely before storing it in an airtight container or vacuum-sealed bag.
