The Spirits Manager leaves for just one week and THREE Waterford Single Barrel Picks suddenly arrive at the store! Up and coming distillery with a lot of buzz behind it, Larrikin Bourbon Company Single Barrel Kentucky Straight Bourbon is here! Bold, rich and full-bodied with prominent notes of caramel, toasted oak, vanilla, cinnamon and leather. Dancing Goat Distillery - Cambridge, Wisconsin 'A Quirky & Humble Barrel' 8-year-old Straight Bourbon aged exclusively in Quercus Humboldtii barrels (aka Colombian oak--an oak species that grows in the Andes Mountains). Unique and intriguing with notes of dried herbs, dark caramel, cocoa, cherries and crème brulée. Finally, we bought a Single Barrel of Dancing Goat's Brandy as well! Going forward, all of the brandy that Dancing Goat produces is going exclusively into the Charlie Berens' brand. So this is a last-chance opportunity to taste a cask strength version of their own "house style" brandy!

Wow—last night’s New Wave California wine tasting was an absolute blast! 🍷

✨ We explored some of the most exciting bottles coming out of California right now—think skin-contact whites, fresh reds, and wild, rebellious blends that challenge everything you thought you knew about California wine.

From the zippy 2023 Aligoté by Margins to the soulful Syrah from Pax, every pour told a story of creativity, minimal intervention, and pure passion. It was a night of discovery, laughter, and adventurous sips.

🐟 Salmon en Papillote + Pinot Gris: A Fresh and Elegant Pairing 🍷✨

Why do these two make such a perfect match? The delicate, flaky salmon baked with fresh herbs and vegetables pairs beautifully with Pinot Gris’ crisp acidity and subtle citrus notes. The wine’s fruity, slightly floral profile complements the light, fresh flavors of the dish while balancing its richness.

✨ Quick Recipe:

Ingredients:
2 salmon fillets
1 zucchini, thinly sliced
1 carrot, julienned
1 lemon, sliced
Fresh dill and parsley
Olive oil, salt, and pepper
Parchment paper

Instructions:
1️⃣ Preheat oven to 375°F (190°C).
2️⃣ Place each salmon fillet on a sheet of parchment paper. Top with zucchini, carrots, lemon slices, and herbs. Drizzle with olive oil and season with salt and pepper.
3️⃣ Fold the parchment into packets and bake for 12-15 minutes.
4️⃣ Serve with a chilled glass of Pinot Gris for the perfect balance of flavors.

We explored the heart and soul of Spanish wine through a lineup that told the story of Rioja — not just in taste, but through its history, culture, climate, and geography. From bold, iconic producers to the whispering brilliance of the Silenciosos, the tiny micro-wineries reshaping Rioja’s future, every sip was a journey.

Highlights included the elegant 2023 Eterea Kripan Sasikume, the powerful 2016 Remelluri Reserva, and the stunning Miguel Merino lineup that let us dive deep into Rioja’s terroir.

🐾 Underdog Pet Rescue of Wisconsin is an all-breed companion animal rescue based in Dane County. They work tirelessly to find loving, permanent homes for animals in need while strengthening the bond between pets and people through community services and outreach.
