When Fred Einer was breaking ground during the construction of Holiday Wine Cellar in the early 1960’s, Escondido locals must have been curious. The first Saturday of February is all about Pisco Sour, the iconic South American cocktail that blends smooth pisco, zesty lime, simple syrup, egg white, and a dash of bitters for a perfectly balanced sip. 🍋🥚 A little tart, a little sweet, and topped with that signature frothy layer—this cocktail is a true masterpiece!

🍹 A Sip of History
Pisco Sour traces its roots back to 1920s Peru, where American bartender Victor Vaughen Morris first crafted the drink at his Lima bar. Over the years, it became Peru’s national cocktail, and in 2003, the country officially declared Pisco Sour Day a holiday! 🎉

🍋 Classic Pisco Sour Recipe
Ingredients:
✅ 2 oz pisco
✅ 1 oz fresh lime juice
✅ ¾ oz simple syrup
✅ 1 egg white
✅ Ice
✅ A few dashes of Angostura bitters

Instructions:
1️⃣ Add pisco, lime juice, simple syrup, and egg white to a shaker.
2️⃣ Dry shake (no ice) for 15 seconds to create froth.
3️⃣ Add ice and shake again until chilled.
4️⃣ Strain into a chilled glass.
5️⃣ Garnish with a few dashes of Angostura bitters.

Raise your glass—it’s Brandy Alexander Day! 🍸 This creamy, dreamy cocktail is the perfect way to close out the month in style. Made with brandy, dark crème de cacao, and velvety cream, it’s basically dessert in a glass.

Fun fact: This was John Lennon’s favorite cocktail! He called it a ‘milkshake’ and was first introduced to it by singer-songwriter Harry Nilsson during Lennon’s infamous ‘lost weekend.’ That wild first encounter? It led to the two getting so drunk they were thrown out of The Troubadour in LA! 🤯

🍸 Brandy Alexander with a Hazelnut Twist
Ingredients:
✅ 2 oz brandy
✅ 1 oz dark crème de cacao
✅ 1 oz heavy cream
✅ Ice
✅ Freshly grated hazelnut zest for garnish

Instructions:
1️⃣ Fill a cocktail shaker with ice.
2️⃣ Add brandy, crème de cacao, and heavy cream.
3️⃣ Shake well until chilled.
4️⃣ Strain into a chilled coupe or martini glass.
5️⃣ Garnish with freshly grated hazelnut zest.

Holiday Wine Cellar’s Story Escondido Landmark Destination

When Fred Einer was breaking ground during the construction of Holiday Wine Cellar in the early 1960’s, Escondido locals must have been curious. After all, Fred dug a huge hole in the ground at the intersection of Mission Avenue and Escondido Boulevard, just off old Highway 395, what is now Centre City Parkway. Hardly anybody builds basements in California, but crafty Fred knew he was building something one-of-a-kind: the only below ground retail wine cellar in North County San Diego.

If you were to walk into Holiday Wine Cellar on opening day of 1965, you would see a lot more than just liquor on the shelf. Not only would you find canned goods on the shelves and engraved wooden price tags, the smell of rotisserie chicken would fill the air to greet hungry customers.

Today, over 50 years later, Holiday Wine Cellar is still proudly a family owned and operated business. There have been a few minor adjustments to the store since opening day, such as a self serve wine bar in the authentic wine cellar, removal of the chicken and the addition of the dedicated beer cave. The commitment to high quality customer service has remained untouched by the hands of time, thanks to the help of highly knowledgeable and passionate employees. In 2009, HWC took it one step further and launched the online storefront www.HolidayWineCellar.com. Customers may now receive the same white-glove service whether they are visiting Holiday Wine Cellar’s brick-and-mortar, in Escondido, CA, or from the comfort of their computer.
