We made a whiskey! One day Seth, Kristen, Pete and Paul Marczyk all got together in a warehouse full of whiskey called Cask House and blended up something nice to stamp our name on and serve to all of you. And it’s good! Well, it’s hard not to do something right when you blend whiskey that spent time in Blanton’s 8yr, Stag 10yr and McKenna 10yr old barrels. Elbling is one of the oldest grape varietals in Europe, and is primarily grown along the Mosel River in Germany. It has a crisp acidity, is super fresh, and packs a lot of high energy. Flavors of green apple, pear, herbs, and lime zest - with a minerally backbone. Stunning. NATURAL.

Sottimano Dolcetto is something we look forward to every fall, but this year we were reminded of just how precious and fickle winemaking can be. The '23 vintage of Dolcetto was not a plentiful or easy one. The wine that was produced is gorgeous, but there was not much of it to be made, and, though we are still the exclusive seller of this beautiful wine, we can only offer 10 cases at each one of our wine shops.

Dare we say it: the holidays are upon us. For some of you that may sound daunting, and for others, this may be music to your ears. Personally, we’re more than ready for the romantically crisp weather, the bourbon-focused cocktails, the roasted meats and warm stews, and the gatherings of eating and drinking amongst family and friends. One of our favorite ways to get psyched for an upcoming seasonal change is to find a few new wines that we deem perfect fall/winter sippers and share them with you, our wonderfully astute, wine connoisseur-y customers. Not only are the wines we’ve chosen to feature for the Thanksgiving season perfect for all holiday fare and weather, but these two wines are family owned, organic, low intervention, sustainable and delicious as hell. They both come from California, and if you find yourself a self-proclaimed hater of California wines, do yourself (and your ego) a big ol’ favor and pick these up and just TRY to tell us that they aren’t delicious.

Estate is run by an amazing husband and wife team, Aaron Steinke and Britt Russell, who treat their customers like gold. What’s With That Cheese? Well, White Wine!
By and large, and despite common assumptions, white wines do a better job than red wines as regular partners for cheese. The higher native acidity of white wines is a happier match for both the high salt and fat of most cheeses. Read on:
▪ Comté (France) with white Côtes du Rhône
▪ Emmenthaler (Switzerland) with Dry Sauvignon Blanc (Sancerre or New Zealand)
▪ Fresh Goat with Dry Sauvignon Blanc (Sonoma, Loire, New Zealand)

When You're Craving a Wild Wine...
One of my favorite wines in the shop right now is the Ramon Jane Baudili out of Penedès, Spain, the home of Cava. This white blend of Xarel Lo and Parellada is utterly delicous, but definitely drinks off the beaten path. Between the blend, the terroir, and the fact that this wine is completely sans sulfur, it can be a wild one — in a good way. It's bright and refreshing and kinda creamy and oh-so-salty with notes of preserved lemon, pickled fruit, juicy peach, white flowers, and unripe pineapple.

The Gustavo Pipeño is a great way to introduce yourself to the world's oldest grape, known as Pais. On the nose I get a lot of ripe strawberry and raspberry with a kiss of smoke. There's a savory yet fresh and bright quality to this wine that's highly enjoyable.

Confused about "Natural Wine"? Don't be, Kristen to the rescue!
A natural wine has nothing added, and nothing taken away.
Nothing Added
The "nothing added" part, then, refers to no pesticides of any kind in the vineyards and no additives in the winery. People add stuff to wine to make it more stable, to make it higher in alcohol, to make it taste and feel smoother, and to make a quicker-made wine taste more aged. Natural wine uses none of these tactics in the vineyard or winery.

Natural wine truly is just grapes and yeast, but here the yeast is naturally occurring in the winery or on the grapes, so no commercial yeast is needed. Also, commercial yeasts can alter the direction in which fermentation would naturally go, so we also require that natural wines not use commercial yeast.
Nothing Taken Away
The "nothing taken away" part means that a natural wine is not filtered or fined. You may have seen evidence of zero filtration in a wine bottle before — that's just yeast, and it's harmless. We like to say it adds MORE flavor or character to a wine, like salt to food. When you see no sediment in a natural wine, it may have been gravity-filtered naturally so that the sediment fell over time and then was removed.

Several agents can be used for fining wine, and it is the use of animal-derived products such as egg whites or milk casein that can prevent a wine from being marketed as vegan. Filtration strips a wine of character. The more you filter, the more you strip. So, as we see it, to be natural, a wine cannot be filtered.
To sum up, a natural wine:
• has nothing added and nothing taken away
• is fermented with native yeasts only — no commercial yeast
• contains no pesticides or additives
• was not fined or filtered

Drink This Wine is a collaboration between cookbook writer and internet cutie Molly Baz (author of Cook This Book and More is More) and one of our favorite natural wine idols out of Oregon, Andy Young, of The Marigny — a collaboration that makes total sense, seeing as Molly and Andy are both into great-tasting, not-too-fussy, well-sourced food and drink things.

White: An interesting blend of Riesling, Auxerrois and Pinot Gris, this white is aromatic as heck.
Orange: This juicy wine rides the line of white wine and skin contact (or orange) wine.
Cuvee: This wine is FUN! Juicy, bright, chillable — actually, we think even MORE chillable than the wine called "chillable" listed below.

Wanna go for a joy ride? Take your place atop this supple and resilient tannin frame on a comfortable and well-balanced seat of fresh black cherry and lavender-hinted oak. Commuter Cuvée is a blend of 11 vineyards, located all over the Willamette Valley. Each vineyard lot is fermented separately and aged in a mix of 70% French oak, 15% stainless steel, and 15% concrete tanks. It is then aged for 9 months before bottling. There's very little new oak in this wine, the aim of which is to make a fresh and pure expression of Willamette Valley Pinot Noir.
