Searing Veal Short Ribs for tomorrow nights wine dinner
Sometimes being a chef is all about the tricks of the trade. Here I'm using a French Fry cutter to dice blanched and skinned heirloom tomatoes for our Pommadoro sauce šDicing these by hand takes forever and is super messy. I wish I thought of that 20 years ago!
