Tasting Notes
Nose - The color is light but first whiff I get smells dark and smoky sweet like a brown sugar in a BBQ rub. Coming back to it and it opens a bit more with hints of oak and leather. 4

Palate - Light but oil starts to develop the longer I keep it in the front of my mouth. It’s leathery with cinnamon spice and good, but straightforward and not too complex. The sweetness fades after a bit and turns bitter with hints of licorice. 3

Finish - Cinnamon and slight heat but after an exhale I start to get burnt sugar. 3.5

Big House Bourbon is sourced from MPG of Indiana (aka Lawrenceburg Distillers of Indiana) and a product of Underdog Wine & Spirits, a large producer of wines and spirits based out of Livermore, California. The mash bill consists of 60% corn, 35% rye, and 5% malted barley, which is why this bourbon is considered a "high-rye" whiskey. It's aged for at least 6 years in charred, American white oak casks and bottled at 45% abv.

Tasting Notes :
Nose: There's a distinct aroma of sawdust on the nose of this bourbon.

Palate: The palate is rye forward, with a background of dark chocolate covered cherries, baking spices, and salty nuts.

Finish: The finish is remarkably long and spicy and recalls fresh black peppercorns.

Elaborated with Maguey Madrecuishe (Agave Karwinskii). It is distilled twice in copper stills. Madre cuixe Agave maturity occurs at 14 years for optimal harvest, under extreme natural conditions. It is a kind of Agave that has a more complex composition, develops fewer sugars, generating more fiber, hence its aroma and flavor characteristics

Nose - Moderately overcooked agave and smoky notes stand out to the nose. A subtle expressions of mandarin, orange, cherry, pineapple and pear with a touch of cumin, pepper and cinnamon aromas.

Palate - Full-bodied to the palate.

Finish - An elegant assemblage of citric and fruity flavors enrobe the agave notes of pumpkin, pepper and cinnamon, to close with notes of toffee.

JUNMAI DAIGINJO SNOW AGED 3 YEARS "YUKIMURO"

Matured for three years in Hakkaisan’s “Yukimuro,” a traditional, eco-friendly snow storage facility, this sake is fine yet complex. From the cold snow, temperature is naturally kept stable at 37ºF year round, without the use of electricity. This allows the sake to gently mellow undisturbed.

Tasting notes are round with layered flavors and smooth texture. The aromas from the rice used in brewing are fairly intense, with a long finish.
