Goose Island Sout Cask Finish

Aged in premium ex-bourbon barrels for over five years and then finished in Goose Island Bourbon County Brand Stout barrels. Delight in aromas of brown sugar, coffee beans, and honeycomb as they merge on the palate with malty chocolate, a hint of citrus, cinnamon, and hazelnuts.

This 116.2 proof bourbon is a part of Small batch 007 which is a blend of low rye (21%) & high rye (36%) Bourbon barrels, all aged to a minimum of 7 years. The whisky was finished in a combination of new charred and second - use oak barrels.

Cigar Blend Bourbon -
This 119.4 proof bourbon is a part of Small batch 008 which is a blend of low rye (21%) & high rye (36%) Bourbon barrels, all aged to a minimum of 7 years. The whisky was finished in a combination of Armagnac, Sherry, Cognac & port casks.

Tasting Notes
Nose - The color is light but first whiff I get smells dark and smoky sweet like a brown sugar in a BBQ rub. Coming back to it and it opens a bit more with hints of oak and leather. 4

Palate - Light but oil starts to develop the longer I keep it in the front of my mouth. It’s leathery with cinnamon spice and good, but straightforward and not too complex. The sweetness fades after a bit and turns bitter with hints of licorice. 3

Finish - Cinnamon and slight heat but after an exhale I start to get burnt sugar. 3.5

Big House Bourbon is sourced from MPG of Indiana (aka Lawrenceburg Distillers of Indiana) and a product of Underdog Wine & Spirits, a large producer of wines and spirits based out of Livermore, California. The mash bill consists of 60% corn, 35% rye, and 5% malted barley, which is why this bourbon is considered a "high-rye" whiskey. It's aged for at least 6 years in charred, American white oak casks and bottled at 45% abv.

Tasting Notes :
Nose: There's a distinct aroma of sawdust on the nose of this bourbon.

Palate: The palate is rye forward, with a background of dark chocolate covered cherries, baking spices, and salty nuts.

Finish: The finish is remarkably long and spicy and recalls fresh black peppercorns.
