It is with heavy hearts that we announce Dedalus will close its doors in Burlington and Stowe.

We are deeply grateful for the support from our dedicated staff, loyal customers, vendors, and local farmers who made our journey truly special. You’ve been the backbone of our journey, and it’s been an honor to share our passion for wine and community with you.

While this chapter comes to an end, we carry forward the memories and relationships we’ve built here together.

Join us for a very special Champagne dinner in the Wine Bar with Winemaker .templier of J Lassalle on Thursday, October 17th 💛

Upon founding J Lassalle in 1942, Jules Lassalle set a standard for excellence. When he passed away in 1982, his wife Olga and their daughter Chantal stepped in and took over the estate. Come 2006, Chantal’s daughter Angéline joined as winemaker. The three of them have continued to push the domaine forward throughout the decades, all the while maintaining that standard set 80 years ago. These small-production wines are harmonious, versatile, and downright delicious.

We are excited for the opportunity to serve them to you alongside the winemaker herself. You’ll learn more about her family and their domaine, and the picturesque village of Chigny-les-Roses. To pair, Chef Brian has dreamed up a menu of bistro-fare that will prove the sentiment we at Dedalus have long held: Champagne is fit for the whole meal.

“My taste tends to lean more classical, but I can be persuaded to swing for an explicitly natural wine, like this exciting blend of Grenache Gris, Grenache Blanc, and Macabeo. It has a lovely, creamy but bright finish that makes it immensely satisfying for weeknight dinners. Plus...the Monty Python reference is a hit when I bring it to parties.”

Tony’s Steakhouse is back! 🥩🍷The American Steakhouse is a pillar of classic dining. A shrine to magnificent beef and first-class showmanship.
