Who doesn't love Mac & Cheese for the holidays? 🙌🧀

We've got a *healthier* option for a great side dish that's sure to be a hit (especially with the little ones) on your holiday table! Many of the ingredients you'll need to make this simple and warming delight are ON SALE right now at Green Top!

FRESH DEALS INCLUDE:

Organic Valley Sharp Cheddar only $5.49

HERE'S THE RECIPE FROM OUR DELI:
* Add the sauce mixture to the squash puree and stir until the cheese is melted and the sauce is completely smooth. You may have to cook on low heat and continuously stir for everything to homogenize.

Butternut Squash Mac and Cheese

Ingredients:
* 2 ¾ lbs Butternut Squash
* 2 lbs Brown Rice Pasta
* 2 ½ cups Water
* 2 Tbsp Salt
* 1 tsp Dry Sage
* 2 cups Heavy Cream
* 2 tsp Salt
* 1 Tbsp Mustard
* 2 Tbsp Smoked Paprika
* ¼ tsp Black Pepper
* 1 lb Sharp Cheddar Cheese, grated

Equipment:
* Large saucepan
* Large mixing bowl
* Immersion blender
* Microwave containers
* Cooling rack

Directions:
* Cook Brown Rice Pasta in boiling water and salt for 12-15 minutes, until "al dente." Drain and rinse under cold water to prevent further cooking.
* Add the sauce mixture to the squash puree and stir until the cheese is melted and the sauce is completely smooth. You may have to cook on low heat and continuously stir for everything to homogenize.
* In a large saucepan, boil water and dry sage, then add squash. Reduce heat to a simmer and cover with a lid for about 20 minutes, or until tender.
* In a mixing bowl, mix together heavy cream, spices, and grated cheese. You can use a food processor to grate the cheese.
* Once the squash is tender, use the immersion blender to puree the squash in the same saucepan.
* Add the sauce mixture to the squash puree and stir until the cheese is melted and sauce is completely smooth. You may have to cook on low heat and continuously stir for everything to homogenize.
* Pour sauce over cooked pasta in a large mixing bowl and stir to combine.
* Portion into small microwave containers immediately without a lid and place on a cooling rack in the walk-in. Once it's sufficiently cooled, garnish with paprika from a shaker, then cover with a lid and label.
