Some cocktails benefit from homemade or authentic ingredients. The Scofflaw Cocktail is one that really shines with a good grenadine. Grenadine is a pomegranate syrup that is easy to make at home and doesn’t at all taste like the red corn syrup ‘grenadine’ you might find at the store.

3/4 oz. Dry Vermouth
1/2 oz. Maraschino Liqueur
4 dashes Dr. I.J. Douglass’s Oregon Cherry Bitters

Celebrate cooling nights with a riff on the classic Gold Rush cocktail.

1/2 oz Honey Syrup
1/2 oz Lemon Juice
1 Tbsp Fig Jam
1 Egg White
4 Dashes Dr. I.J. Douglass’s Oregon Cherry Bitters

Shake all ingredients, vigorously, with ice. Strain into a cocktail glass. Garnish with fresh figs.

Honey Syrup: Bring equal parts honey and water to boil, stir to combine, allow to cool.

For a vegan cocktail, egg white can be substituted for 2 Tbsp of aquafaba (the drained liquid from canned chickpeas).

1/2oz. Honey Syrup
1/2oz. Fresh Lemon Juice

Combine all ingredients and shake well with ice. Strain into a cocktail glass. Garnish with cocktail cherries, smoked if you got them. For honey syrup boil equal parts honey and water, stir, stir and let cook. Simple syrup can be used if no honey syrup is to be had.

1 tsp. Powdered Sugar
2 tsp. Water
4-5 Mint Leaves
3-4 dashes of Dr. I.J. Douglass’s Mint Bitters

Place mint leaves, bitters, water, and powdered sugar in the bottom of a glass, and muddle to mix and dissolve the sugar. Add crushed or pebbled ice to the top of the glass in a big heap. Pour the bourbon over the ice. Garnish with more mint. A straw or julep spoon is very helpful in drinking this American classic.

1 oz. Lemon Juice
3/4 oz. Simple Syrup
1 Egg White
4 dashes Dr. I.J. Douglass’s Amour En Cage Cocktail Bitters

Add all ingredients into a cocktail shaker. Add ice and shake, a lot. Shake until the shaker is so cold you can’t hold it. More shaking more foam, more refreshment.

Strain into a glass and top with a few more dashes of bitters.

A classic tiki drink, dark rum mixes with spicy falernum and tart limes.

2 oz. Cruzan Dark Rum
1 oz. Falernum
1/2 oz. Lime Juice

For 4 servings:
-1/4 c. Cocoa Powder
-1 tbsp. Sugar
-3 cup Whole Milk
-4 oz. Milk Chocolate Chips
-4 oz. Bittersweet Chocolate Chips
-4 oz. Tequila
-2 oz. Peppermint Schnapps
-1/4 oz. Dr. I.J. Douglass’s Mint Bitters.
-Whipped Cream for the top

Add chocolates, cocoa powder, sugar, and milk in a pot over medium heat. Whisk and heat until all chocolate is melted and fully mixed. Add tequila, schnapps, and bitters. Transfer to mugs and top with whipped cream.

6 dashes Dr. I.J. Douglass’s Metaphysical Bitters
1/2 oz. Triple Sec
1 oz. Lillet
1/4 oz. Benedictine
2 oz. Champagne or Sparkling Wine

Combine all ingredients except champagne in a mixing glass and stir with ice. Pour into a champagne flute and top with champagne. Express an orange peel over the glass, rub the rim with the peel, and discard.
