This is our last week of product reveal before our shipment from Japan arrives 😄! We're very excited to introduce Tamayuki Ryu Daiginjo | 玉雪 龍 大吟醸 from Takahashi as one of our SakeDrop Members Exclusive Collection.

An extremely rare and special Daiginjo sake made with Yamada Nishiki 山田錦 (aka “king of sake rice”). Takahashi’s Toji brewed this special label in pursuit of Niigata's classic light, crisp, and dry taste. The aroma is delicate, while the taste is refreshing, and clean. It has an elegant crisp, and dry finish that many of our sushi chef friends love.

Did you know that a long time ago, there was a culture of drinking sake with ,only salt, especially in the Niigata region? For those that enjoy experimenting, we recommend you try it with a touch of salt, or with savory snacks. While this is extremely versatile. This week, we're super excited to introduce a very unique sake. This will be our first in the collection... Junmai Genshu Kawasemi no Tabi | 純米原酒カワセミの旅, from Takahashi.

This truly unique is unpasteurized and made entirely with rice (junmai). It carries a fruit forward aromas, a mellow sweetness, with a touch acidity to balance the medium mouth feel. Perfect for people who love experimenting with Japanese sake and an excellent choice for anyone trying sake for the first time. This is an excellent sake that offers a refreshing change from the standard light, dry Niigata sake. Have some fun and try pairing with dark/bitter chocolates, chocolates with fruit, cheesecake, ice cream, and a variety of strong cheeses such as blue cheese. Our favorite is to pair it with foie gras, lamb, or pork.

Introducing the Collection, from our newest artisan-brewery Takahashi Shuzo!

The 'Silver' Junmai Ginjo is an International Sake Challenge Award winner! This super delicious Junmai Ginjo has been carefully crafted for a gentle hint of citrus aroma, a touch of acidity, and a clean and medium-dry finish. We're excited as this will be one of our most versatile craft sake when it comes to pairing with a variety of seasonal dishes.

We'll also be offering the 'Gold' Junmai Daiginjo as an exclusive members' only pre-order product. In Japan, this Limited Edition Gold label Junmai Daiginjo is only sold exclusively to selected restaurants in the local neighborhood, on a seasonal bases. Introducing our newest member to the SakeDrop brewery selections, Takahashi Shuzo | #高橋酒造... not to be confused with the much larger/commercialized Takahashi Shuzo Co. Ltd.

Takahashi and its team, led by Echigo Toji (Brew Master), is well known for its focus on individuality, creating different labels to showcase each craft sake's uniqueness. All of the brews are done using the highest-quality local sake rice, clean and crisp water, and leveraging the snowy cold winter climate of Niigata, Japan to craft the best artisan sake slowly.

Introducing the second of three in the Yoikana Sake Brewing collection!
The Junmai Ginjo Soucho Shibori “Early Morning Squeeze”| 善哉 大安吉日 早朝しぼりis an artisan sake that is super rare! Yoikana’s Toji (brewmaster) had hand crafted this special Nama-Chozo-Shu* (single pasteurization right after bottling) for those that enjoy the freshness and richness of nama-zake, while being able to withstand a bit more storage time. This wonderfully delicious craft sake is made with traditional techniques using Yamae nishiki (a newer Nagano Prefecture sake rice). Enjoy this fresh, fruity sake by itself, or try pairing it with all kinds of food, such as sushi, sashimi, and hot pot.

As we await for our shipment, we wanted to start introducing you to some of our newest collections, starting this week.

Many of you have raved about our Mizuo collection. For this year we'll be introducing to our subscribers and friends Mizuo Daiginjo | #水尾 大吟醸! This was hand crafted by the award winning Brewing team in Iiyama, Nagano, Japan. Slow and low temperature fermentation give this Daiginjo profound flavor and aroma that is refreshingly smooth. Great for sipping and pairs well with many Japanese dishes such as Sushi, and Sashimi, as well as light Asian dishes that uses dashi stock-base. For those that are new this is one of our legacy artisan breweries. Our 2022 collections will be filled with new types of sake to help broaden your sake flavor palette. One of the rarer, but flavorful types of sake is sweeter sake. Some of you may have experienced amazake, which is a sweet sake. However, the sake coming this year is at a sweetness level between amazake and regular sake to bridge that gap between sake and amazake lovers.

Sweeter sake can be described as having stronger aromas with a stronger and more complex flavor. With the flavor being so complex, it is important to understand what foods it pairs well with. Sweeter sake pairs well with the likes of cheese, pork, chocolate, and a personal favorite of SakeDrop's, foie gras!

We cannot wait to reveal more in depth about this year's collection in the coming weeks with our shipments coming in soon!

As promised, we will begin to reveal some of this Spring’s unique collections while our artisan sake is being bottled/shipped. Let’s get started!

We are excited to announce that this Spring's collection will be involving the unique tastes of nama-zake / nama-chozo that many of you had been asking for!

In case you didn’t know, regular sake normally undergoes two stages of pasteurization (typically, after pressing and before bottling) vs. nama-zake which is unpasteurized. Nama-chozo (single pasteurization) skips the first and goes straight through to the second pasteurization, which allows the brew to achieve many of the delicious and delicate flavors of nama-zake while allowing longer, more stable storage. This delicate balance of optimizing fresh taste and longevity is only possible under the handcrafted skillset of our artisan breweries. There will be more to share in the coming weeks!

Get an inside look at what the breweries have been doing in preparation for this year's batch of sake. The breweries are currently in the final stages of their brewing season. During mid-spring is when the brew masters stay and pasteurize the sake while the other workers get to go home and spend time with their families.

These are a few photos of the past couple of months for our breweries. These pictures display the tough cold environment they had to face during the winter season as well as important steps in the brewing process they recently finished. The importance of having the brewing season during the colder months is for the sake to stay cooler. They were able to create the sake mash in which water, rice and koji are added and then let sit. The other inside of the shikomi tank. They then hang the sake in bags in which the sake is filtered and dripped out. This method is called sake pressing, in which the sake that is dripped from the bags to filter. Our breweries are working very hard to get their sake to all of you!

💕 Valentine's Day is almost here and got us thinking about things that could help sweeten the mood. Sweeter sake and dark chocolate are an incredibly unique pairing that works extremely well.

Our friends at Royce' Chocolate Bellevue highly recommended the Nama Chocolate "Ghana Bitter", which is a liquor free dark chocolate, perfect for pairing with a sweeter sake which can really enrich the bittersweetness of a dark chocolate. We recommend pairing dark chocolate with our artisan brewed Mizuo Junmai Ginjo, which has gorgeous floral peach aromas with a medium finish. The perfect late-night combination for Valentine's Day!

A member asked how to serve sake in a mokkiri style. Mokkiri involves a tokkuri glass inside of a masu wooden box. When serving in a mokkiri style, the server overpours the glass, with extra sake left inside the masu. The amount that is overpoured shows the server's generosity.

With this special type of way to serve sake, there comes etiquette on how to drink it. It is important to pour enough out of the top of the tokkuri into the masu so you do not spill. There will be drippings from the bottom of the tokkuri so drink it above the masu to let the drippings go back into the box. When you are finished with what is inside the tokkuri, you can pour as much as you would like from the masu back into the tokkuri and continue to enjoy from there.

Some of you have been asking “how to pair sake with Chinese food?” We are thrilled to say that sake (with its food-friendly nature) pairs well with a wide range of flavors and is a great match for Chinese cuisine. In general, drier styles such as our Mizuo “Everyday Collection” and Junmai-Ginjo work nicely with many deep-fried and stir-fried dishes.

A good sake paring is one that cuts the oil and moderates the spice. A crisp and dry sake acts like a palate-cleanser that strips the oils and washes away the heavy components of many dishes, while allowing you to taste the vast array of flavors within.

Some of you may want to try warming Junmai-shu to enhance the sake’s umami similar to shokoshu (Shaoxing, or Chinese rice wine), which is sometimes served warm as it harmonizes with the spices and umami of the dishes.

A fresh, fruity sake, such as Mizuo Junmai Ginjo or Metoba no Izumi Junmai Ginjo, is delicious with more delicate seafood dishes such as steamed fish or steamed dumplings with shrimp or pork (another lucky food, symbolic of happiness and laughter). While heavier, meat-based dishes can handle bigger and bolder flavors like our Metoba no Izumi Yamahai Junmai. The yamahai sake’s touch of gamy/earthiness does wonders with chicken and pork dishes!

The key is to have fun and experiment when pairing with Chinese food! Enjoy, have fun, and many great wishes for the year of the Tiger 2022!

In case you’re wondering what our artisan sake breweries are up to. During this time of the year, it is considered peak brewing season. Brewing season usually starts in Oct, but during the colder months Jan and Feb brewing is at its peak due to the weather's ability to allow for more controllable temperatures in the brewing process. The fermentation process involves lower temperatures, so this is the most beneficial season for the brew masters, resulting in the most premium sake. Heading into 2022, these are some of the most beloved Japanese food traditions to start off the new year.

Toshikoshi Soba, also known as the "year crossing noodle", is a noodle soup dish that is typically eaten on New Year's Eve. The long length of the noodle represents longevity and the ease of cutting the noodles represents cutting off any negative events or hardships from the prior year.

Mochi, although eaten year-round, is an important aspect of celebrating the new year. The New Year's mochi, also known as "kagami mochi", typically is decorated as two mochi stacked upon each other, along with an orange on top. Eating mochi is said to grant good fortune during the new year due to its name sounding like the Japanese term for "to have" or "to hold".

Kuri Kinton is a Japanese mashed potatoes dish. It includes candied chestnuts called kuri as well as mashed Japanese sweet potatoes known as satsumaimo. The yellow-gold coloring of the dish represents fortunes of wealth, health, and success within the new year.

Some of you are thinking/preparing 正月 (shōgatsu) Japanese New Year is considered to be the most important holiday in Japan. Eating the beautiful and delicious Osechi Ryori on New Year's Day is one of the many traditions celebrated. This special meal includes many small dishes that are served cold in a box called a jubako. These boxes usually contain 2-3 tiers of groups of food that contain different meanings and a belief of a New Year's wish. Having a few bottles of Junmai-shu ready for this important gathering is perfect as it pairs exceptionally well with this delightful meal. This is something to look forward to when New Year's arrives!
