It’s 🍾 and we’re thrilled to spotlight this awesome ancestral method pet-nat! Le Spontané was a hit on our latest Friday night tasting bar, where we featured natural wines. Unusually, the label just comes out and says what so many ingredient-conscious wine-lovers want to know - sans sulfites ajoutés - no added sulfites! Good, clean juice. 🍾
This one comes to us from Domaine des Hauts Baigneux in northern France’s Loire Valley, though the grapes themselves actually source from southwestern France. Winemakers Nicolas Grosbois and Philippe Mesnier avoid unnecessary interventions in the winemaking process and solely employ native yeasts. Spontané is a blend of Sémillon, Loin de l’oeil, and Mauzac.
Flavor-wise? Though natural and unsulfured, there’s little funk. It’s fresh and dry with notes of apple, chalk, honey, and a hint of bread yeast. And though it’s a pet-nat, don’t let the beer cap fool you: it’s pretty fully sparkling. You might not be able to weaponize a cork as a projectile, but you might think you’re drinking some kind of Cremant. 🍾
