From the winemaker, Ondine de la Feld // The naughty boy: happy, enthusiast, unconventional, freak, simple, spontaneous. Light yellow color, clear and lively. The fermentation in the bottle helps to create an aromatic complexity that varies from herbaceous notes, a minerality hint, citrus and soft floral scents. In the mouth it’s dry and the delicate bubbles enhalt the acidity making it alive.
Il Pestifero, the ‘naughty boy’ Pét-Nat, is part of Tavignano’s ‘I Love Monsters’ line devoted to rediscovering older, traditional winemaking methods through modern technologies.
