Jake Hu's Advanced Sensory Class, Day 3, kicked off with a bunch of Geishas, setting us up for a fun-filled last day. 😎 Can you believe it? Pink Bourbon isn't even a Bourbon! 🫠 We tasted coffees fermented for different lengths, ranging from around 100 to over 700 hours, showcasing the intricacies of coffee processing. So, if you're already struggling with dialing in your cafe's espresso, imagine dealing with fermenting coffee. 😵💫 There was playful banter about fruit-infused coffee that you might as well just buy fruit juice. 😅 We also talked about roast defects, which are super important for roasters. Roasters must be adept at identifying these defects; otherwise, it's the customer's cue to... "call the roaster!" 😂 And lastly, blind cupping helped eliminate bias, ensuring our evaluations were grounded in genuine experience. 👌🏻
Jake Hu's Advanced Sensory Class, Day 2, was a whirlwind of sensory exploration. We delved into various aspects of tasting, including bitterness, tactile experiences, and identifying defects. 😝 If you're accustomed to drinking alcohol, judging bitterness can be particularly challenging. Some of us took a slurp, and interestingly, we were okay with it—it tasted like San Mig! 😆 On the other hand, defects are a no-no! If you taste anything like paper, mustiness, or, worse, animal poo in your coffee, call the farmer! ❌

On Feb 14, we had the pleasure of attending a BREWING ADJUSTMENT CLASS. ✨ Throughout the session, participants dived into four hours of immersive, hands-on training, igniting a personal journey into the art of brewing adjustments. Is ASMR still a thing? 😅 Wow that was a challenge brewing and shooting at the same time. 🤣 Anyway, we got our hands on this Timemore Sculptor 078 and it's currently our favorite electric grinder for everyday use. It's compact and mess proof. And we get nice, clean cups in every brew. ✨
