🧀Époisses AOP
Most famous cheese in Burgundy - extremely soft with a very pungent aroma & distinctive flavor, created by monks from the village of the same name. The color ranges from yellow to orange on the outside & it is white inside. It is first washed in brine, then cured in humid cellars for four weeks. After this brief aging period, the rind is rinsed with Marc de Bourgogne. It is .

🧀Mont-d’Or
Has a distinctive woody taste because it matures in a round wooden frame. Featuring a beige crust, it is surprisingly soft inside, to the point where it runs (hence the wooden belt used during maturation to retain its shape).

🧀Comté
Renowned internationally for its quality, it is very yellow, smooth, & tasty. It is often served in small cubes as an appetizer, but is absolutely delicious melted over potatoes, leeks, or toasted bread.

Soft washed-rind gem characterized by a pale-yellow rind with a soft, melting interior & mild flavors. An increasing amount of Marc de Bourgogne is added to the wash during maturation, creating a sticky, rich orange rind.

Creamy texture & balanced flavor, washed 2-3 times per week with Chablis wine, which gives it a very rich aroma. Its crust is smooth or slightly wrinkled & shiny, & is ivory orange to brick red.

🧀Aisy Cendré
Washed-rind cheese left to mature under a layer of ash, typically from burning vine shoots pruned from local vineyards, from May through September. Firm & creamy, then melting at room temperature, the ash-laden exterior allows the cheese to continue to mature beyond the aging & washing process, resulting to a delectable woody flavor & creamy center.
