𝗔𝗔𝗟𝗧𝗢, Ribera del Duero, Spain. A collaboration of stalwarts of Spanish winemaking, Aalto is the coming together of the Masaveu and Nozaleda families, Javier Zaccagnini, and winemaker Mariano Garcia, who has 30 years under his belt as technical director of Vega Sicilia.

Aalto produces wines focused on Tinto Fino meticulously grown and selectively harvested from over 130 hectares of old vines ranging 40 to 100 years old.

The primary cuvée, 𝗔𝗮𝗹𝘁𝗼, gets about 50% new oak, while the rest sees 2nd and 3rd-fill barrels. In the best vintages, a selection from the best sites is bottled as 𝗔𝗮𝗹𝘁𝗼 𝗣𝗦 – 𝙋𝙖𝙜𝙤𝙨 𝙎𝙚𝙡𝙚𝙘𝙘𝙞𝙤𝙣𝙖𝙙𝙤𝙨, i.e., select estates, and undergoes extended ageing in entirely in new French oak. Both wines have great ageing potential.

Premium Wine Exchange, along with Bendito Destino and Gallery by Chele are coming together for an evening of good banter, great wines and a 6-course tasting menu paired with wines on the 7th of January!

Bendito Destino is a wine project that began taking shape in 2020 by founder & winemaker, Terry Kandylis who is a renowned Sommelier, winning the UK Sommelier of the year in 2016. Along with his partner, Jessa Jastrzemski, native to The Philippines, they realised there was a very important story to tell on the new wave of wines emerging from Ribera Del Duero, Bendito Destino was born and the first harvest commenced in 2021.

Jessa will be pouring three wines from Bendito Destino as well as some other gems from Premium Wine Exchange portfolio. She will touch on how viticulture has been historically linked with Ribera Del Duero for more than two & a half thousand years. Bendito Destino allows this strong heritage and nature to be their guide, crafting wines that respect this rich tradition and reflect the beautiful Terroir of the region. Hence their guiding philosophy is: 'The Past is The Future'

We will be welcoming guests at the restaurant at 6:30 pm, with the experience starting at 7:00 pm.

Viberti — Barolo, Italy. With the intention of crafting and serving great wine to go with dishes served at the family trattoria Buon Padre back in the early 1920s, serendipity brings Viberti to us 100 years later, having taken off entirely on its own as a successful undertaking. The reputation of Viberti has since spread far and wide beyond the confines of the Vergne district in the Piedmont region, and is recognized today for superior-quality, world-class Barolos, Barberas, and a few special boutique whites like Chardonnay and rare, indigenous Timorasso.

Part II

Premium Wine Exchange, in collaboration with Champagne Delamotte, held “Fizz Opulence” last November 11, 2025 at the private dining area of our event partner Aya by Hapag.

Yet another one for the books, this Champagne Delamotte dinner served as testament to how the exquisite Champagnes of Delamotte elevate the food and dining experience shared among close friends. Guests were treated to a carefully designed menu that complemented the unique flavors of Delamotte Champagnes, showcasing the perfect harmony between food and wine.

The evening included tastings of various selections from the Champagne Delamotte range, presented by Mr. Gregoire Piochon, Sales Export Manager of Champagne Delamotte. Each Champagne was expertly paired with local dishes crafted by Aya's talented Chef Nav and Chef Thirdy. Guests delighted in engaging conversation and the joy of connection, making the occasion a memorable celebration of friendship and culinary artistry.

Part I...

Last November 8, we gathered for an intimate dinner called "Eternal Vines," hosted by the energetic Mr. Tim Mondavi, founder of Continuum Estate. Mr. Mondavi took us on a heartfelt journey through his family's rich history, sharing his passion for finding the perfect place for them to continue and express their love for wine, while also giving us a glimpse into their future.

As we savored each of the featured wines, perfectly paired with our delightful dishes, the warmth of shared conversations and laughter filled the air, making the evening even more memorable. A heartfelt thank you to M Dining restaurant for providing a lovely venue, delectable food, and exceptional service that truly enhanced the experience for all the guests.
